Best Fudgy Chocolate Chip Pumpkin Donuts

Today’s recipe is for these fudgy chocolate chip donuts. Since fall is vastly approaching, I wanted to share this recipe for chocolate chip pumpkin donuts!
It might be a little early, but I absolutely love pumpkin desserts. There are so many yummy pumpkin recipes to make, and I will definitely be making many pumpkin treats this fall season.
These donuts have a strong chocolate flavor and a hint of pumpkin. I absolutely love donuts, and they’re easily one of my favorite treats to make. This recipe uses ingredients including rolled oats, baking soda, baking powder, canned pumpkin, cocoa powder, maple syrup, chocolate chips, and almond milk. These are budget-friendly ingredients that you can easily find at your local grocery store.
This is the perfect treat to make if you want a fun fall pumpkin treat. It’s a quick recipe to make and only takes 10 minute to bake in the oven. Let them cool, and enjoy them with a glass of chilled nut milk!
Ingredients
- Rolled Oats: The first ingredient you need is rolled oats. Blend 1/2 cup of rolled oats in a blender or NutriBullet to form oat flour. Rolled oats serve as a great base for donuts, and they’re filling too.
- Baking Soda: You also need 1/4 tsp of baking soda.
- Baking Powder: The next ingredient is baking powder. This recipe calls for 1/4 tsp baking powder.
- Canned Pumpkin: The next ingredient you need is canned pumpkin. Canned pumpkin is one of my favorite ingredients to use because it makes any dessert/baked good super moist. It also adds a nice pumpkin flavor and is great to use during the fall season to make all of your favorite fall treats.
- Cocoa Powder: You also need cocoa powder. I used Hershey’s unsweetened cocoa powder, but you can use any cocoa powder that you want. Cocoa powder adds a strong chocolate flavor and makes the donuts extra chocolatey.
- Maple Syrup: To sweeten these donuts, you need maple syrup. This recipe calls for 2 tbsp of pure maple syrup.
- Chocolate Chips: Next, you need 2 tsp of chocolate chips. I used mini chocolate chips, but you can use any chocolate chips that you want. You can either fold the chocolate chips into the donut batter, or sprinkle them on top. Feel free to use as many chocolate chips as you want!
- Almond Milk: The last ingredient you need is almond milk, or a nut milk of your choice. I used unsweetened vanilla almond milk, but you could also use soy milk, silk milk, or oat milk.
Best Fudgy Chocolate Chip Pumpkin Donuts
Ingredients
- 1/2 cup rolled oats
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1/3 cup canned pumpkin
- 2 tbsp cocoa powder
- 2 tbsp pure maple syrup
- 2 tsp chocolate chips (vegan)
- 1/4 cup almond milk
Instructions
- Preheat oven to 350°
- Blend rolled oats in a blender or NutriBullet to form a flour-like consistency
- Add dry ingredients to a mixing bowl: oat flour, baking powder, baking soda and cocoa powder
- Whisk together wet ingredients to a separate mixing bowl: canned pumpkin, pure maple syrup and almond milk
- Slowly pour wet ingredients into dry ingredients
- Lightly grease a donut pan with olive oil
- Add donut batter to form three donuts
- Sprinkle mini vegan chocolate chips on top
- Bake for 10 minutes at 350°
- Let cool and enjoy!
