- 1/2 cup rolled oats
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1/3 cup canned pumpkin
- 2 tbsp cocoa powder
- 2 tbsp pure maple syrup
- 2 tsp chocolate chips (vegan)
- 1/4 cup almond milk
Preheat oven to 350°
Blend rolled oats in a blender or NutriBullet to form a flour-like consistency
Add dry ingredients to a mixing bowl: oat flour, baking powder, baking soda and cocoa powder
Whisk together wet ingredients to a separate mixing bowl: canned pumpkin, pure maple syrup and almond milk
Slowly pour wet ingredients into dry ingredients
Lightly grease a donut pan with olive oil
Add donut batter to form three donuts
Sprinkle mini vegan chocolate chips on top
Bake for 10 minutes at 350°
