Vegan Pumpkin Spice Donuts
Here’s how you can make delicious vegan pumpkin spice donuts that are perfect for the fall.

It’s mid-October, so fall is in full swing now. I’ve made a few other pumpkin recipes already, but I hadn’t made the classic pumpkin spice donuts yet.
I absolutely love donuts, and they’re easily one of my favorite desserts. So, I thought that it was the perfect time to make some yummy pumpkin spice donuts. They’re vegan, made with budget-friendly ingredients, and taste delicious.
Ingredients
- Oat Flour: The first ingredient you need to make these delicious vegan pumpkin spice donuts is oat flour. Blend 1 cup of rolled oats in a blender to make oat flour.
- Baking Soda: The next ingredient you need is baking soda. This recipe calls for 1/2 tsp of baking powder.
- Truvia: To sweeten these pumpkin spice donuts, I used Truvia. This recipe calls for 2 tbsp of sweetener.
- Vanilla Extract: The next ingredient you need is vanilla extract. You need a splash of vanilla for this recipe.
- Pumpkin Pie Spice: The main spice you need for this recipe is pumpkin pie spice. Pumpkin pie spice brings out the pumpkin pie flavor.
- Cinnamon: The next spice you need is cinnamon. You need 1/4 teaspoon of cinnamon for this recipe.
- Canned Pumpkin: The next ingredient you need is canned pumpkin. This recipe calls for 1/2 cup of canned pumpkin.
- Coconut Oil: The next ingredient you need is coconut oil. If your coconut oil is hard and clumped together, heat it in the microwave for 10-20 seconds or until it’s in a liquid consistency. You need 1 tbsp of coconut oil for this recipe.
- Almond Milk: The next ingredient is almond milk. Feel free to use any nut milk of your choice.
- Mini Chocolate Chips: The last ingredient you need is mini chocolate chips. I used Lilly’s, which are vegan baking chips, but you can use your favorite vegan chocolate chips. I also really like Enjoy Life’s mini chocolate chips. This recipe calls for 1 tbsp of chocolate chips, but feel free to add more if you like a lot of chocolate. You can fold them into the batter and sprinkle them on top.
Directions
First, preheat the oven to 350°.
Then, blend one cup of rolled oats in a blender to make oat flour.
Next, combine all of the dry ingredients to one bowl: oat flour, baking soda, Truvia, cinnamon, and pumpkin pie spice.
Combine all of the wet ingredients to a separate bowl: vanilla extract, coconut oil, almond milk, and canned pumpkin.
Slowly fold the dry ingredients into the wet ingredients until the batter is thoroughly mixed.
Then, fold in the mini chocolate chips.
Next, spray a donut baking pan with olive oil spray.
Then, fill the pan with six donuts.
Sprinkle mini chocolate chips on top.
Bake the donuts in the oven for 10 minutes at 350°.
Let cool and enjoy!
Vegan Pumpkin Spice Donuts
Ingredients
- 1 cup oat flour
- 1/2 tsp baking soda
- 2 tbsp truvia
- 1/2 tsp vanilla extract
- 1/2 tsp pumpkin pie spice
- 1/4 tsp cinnamon
- 1/2 cup canned pumpkin
- 1 tbsp coconut oil
- 1/2 cup almond milk
- 1 tbsp mini chocolate chips
Instructions
- Preheat oven to 350°
- Blend rolled oats in a blender until it forms a flour-like consistency
- Combine all dry ingredients to one bowl: oat flour, baking soda, truvia, pumpkin pie spice, and cinnamon
- Combine all wet ingredients to a separate bowl: vanilla extract, canned pumpkin, coconut oil, and almond milk
- Slowly fold in dry ingredients to wet ingredients
- Fold in mini chocolate chips
- Spray a donut baking pan with olive oil spray
- Form six donuts
- Sprinkle chocolate chips on top of the donuts
- Bake at 350° for 10 minutes
- Let cool and enjoy!
