Vegan Pumpkin Spice Donuts

- 1 cup oat flour
- 1/2 tsp baking soda
- 2 tbsp truvia
- 1/2 tsp vanilla extract
- 1/2 tsp pumpkin pie spice
- 1/4 tsp cinnamon
- 1/2 cup canned pumpkin
- 1 tbsp coconut oil
- 1/2 cup almond milk
- 1 tbsp mini chocolate chips
Preheat oven to 350°
Blend rolled oats in a blender until it forms a flour-like consistency
Combine all dry ingredients to one bowl: oat flour, baking soda, truvia, pumpkin pie spice, and cinnamon
Combine all wet ingredients to a separate bowl: vanilla extract, canned pumpkin, coconut oil, and almond milk
Slowly fold in dry ingredients to wet ingredients
Fold in mini chocolate chips
Spray a donut baking pan with olive oil spray
Form six donuts
Sprinkle chocolate chips on top of the donuts
Bake at 350° for 10 minutes
Let cool and enjoy!
