Vegan Pumpkin Chocolate Swirl Brownies

We’re only a few days out from Thanksgiving, so I wanted to share this delicious recipe for vegan pumpkin chocolate swirl brownies. I prepped these brownies a few days in advance, but I’m so excited to share these brownies.
I may have tried one already, and I have to say that they’re super delicious. They turned out even better than I expected, and I am definitely going to devour these on Thanksgiving. They’re gooey, fudgy, and if you love pumpkin, then you will certainly love these pumpkin swirl brownies.
These brownies are sweetened with dates, maple syrup, and dark chocolate chips, and the almond butter makes them super creamy and fudgy. You can top the brownies with chocolate chips or make a chocolate frosting for them, but I added a pumpkin swirl on top with canned pumpkin and sprinkled a few chocolate chips on top.
The ingredients you need to make these brownies are affordable and can be easily found at your local grocery store. Here are the ingredients you need to make these delicious brownies.
Ingredients
- Oat Flour: The first ingredient you need is oat flour. Blend rolled oats in a blender to make oat flour.
- Whole Wheat Flour: The next ingredient you need is whole wheat flour. This recipe calls for 1/2 cup of whole wheat flour.
- Baking Powder & Baking Soda: The next ingredients you need are baking powder and baking soda. This recipe calls for 1/2 tsp of baking powder and baking soda.
- Canned Pumpkin: The next ingredient you need is canned pumpkin. Canned pumpkin makes the brownies super fudgy and gooey.
- Medjool Dates: You also need 1/4 cup of pitted dates. Dates are super sweet and add the perfect amount of sweetness to these vegan chocolate pumpkin brownies.
- Almond Butter: Next, you need 2 tbsp of almond butter.
- Cocoa Powder: You also need 1/4 cup of cocoa powder. I used unsweetened cocoa powder for this recipe.
- Cinnamon & Pumpkin Pie Spice: The spices you need for this recipe are cinnamon and pumpkin pie spice. Pumpkin pie spice and cinnamon are both strong spices and add the perfect flavor to these chocolate pumpkin swirl brownies.
- Nut Milk: You also need a nut milk of your choice. I used unsweetened vanilla almond milk, but you can use your favorite nut milk for your recipe.
- Vanilla Extract: The next ingredient you need is vanilla extract.
- Pure Maple Syrup: To sweeten these brownies, you need 3 tbsp of pure maple syrup. Maple syrup is one of my favorite sweeteners to use because it’s a natural sweetener.
- Dark Chocolate Chips: Lastly, you need 2 tbsp of vegan dark chocolate baking chips. I sprinkled a few chocolate chips on top before popping them in the oven, but you can fold some chocolate chips into the batter if you want them to be extra sweet.
Chocolate Pumpkin Swirl Brownies
Ingredients
- 1/2 cup oat flour
- 1/2 cup whole wheat flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 cup canned pumpkin
- 1/4 cup pitted dates
- 2 tbsp almond butter
- 1/4 cup cocoa powder
- 1/2 tsp cinnamon
- 1/2 tsp pumpkin pie spice
- 1/4 cup + 2 tbsp nut milk (I used unsweetened vanilla almond milk)
- 1 tsp vanilla extract
- 3 tbsp pure maple syrup
- 2 tbsp dark chocolate chips (vegan)
Instructions
- Preheat oven to 350°
- Add dry ingredients to a large mixing bowl: oat flour, whole wheat flour, baking soda, baking powder, cinnamon, pumpkin pie spice and cocoa powder
- Blend dates and milk in a blender until thoroughly mixed
- Add wet ingredients to a separate mixing bowl: dates, milk, canned pumpkin, almond butter, vanilla extract and pure maple syrup
- Add wet ingredients to dry ingredients
- Lightly grease a brownie pan with olive oil
- Add brownie mixture to the pan
- Sprinkle vegan dark chocolate chips on top
- Form a pumpkin swirl on top
- Bake in oven for 20 minutes at 350°
- Let cool and enjoy!
Notes
These brownies are super fudgy and one of my new favorite recipes! I absolutely love brownies and pumpkin brownies are even better! This is a quick recipe that you can easily make in about 30 minutes with prep time and all. Add your favorite toppings and enjoy!
