Vegan S’mores Mug Cake Dessert Recipe

This s’mores mug cake dessert recipe is easy to make and calls for six simple ingredients. Make this for breakfast, as a snack, or for dessert.

I bought these mini vegan marshmallows from Trader Joe’s a few weeks ago and have been making new recipes with them ever since. This vegan s’mores mug cake is warm, gooey, sweet, and will certainly satisfy your sweet tooth.

One of my favorite treats to make are mug cakes because they’re easy to make and delicious. I don’t always want to spend hours in the kitchen baking, which is why I like to make simple recipes. This recipe takes about 5 minutes to prep. Heat it in the microwave for 60 seconds, add your toppings, and enjoy! There will be so many more fun holiday recipes I’ll be sharing, so stay tuned!


Ingredients

  • Rolled Oats: The first ingredient you need is rolled or instant oats. Blend the oats in a blender to make oat flour.
  • Baking Powder: The next ingredient you need is baking powder. This recipe calls for 1/4 tsp of baking powder. Baking powder acts as a leavening agent.
  • Banana: The next ingredient you need is banana. I like adding banana to my mug cake recipes because it adds sweetness and creates the perfect consistency.
  • Nut Milk: The next ingredient you need is a nut milk of your choice. I used unsweetened vanilla almond milk for this recipe.
  • Mini Chocolate Chips: Next, you need 1/2 tbsp of mini vegan chocolate chips. Fold your chocolate chips into the batter so that they melt, but feel free to sprinkle a few on top once the mug cake has finished cooling. Add as many chocolate chips as you want!
  • Mini Marshmallows: The last ingredient you need is mini marshmallows. Fold the marshmallows in the batter so that they don’t overflow out of the bowl. You may need to heat the mug cake in the microwave in 20-second increments.
  • Toppings: Add your favorite toppings. My favorite toppings include creamy peanut butter, chocolate chips, and mini marshmallows. You could also add banana slices, maple syrup, sprinkles, or another topping of your choice!

Directions:

1. Add rolled oats, baking powder, banana, and nut milk to a blender. Blend until there is a thick and creamy consistency.

2. Fold in the mini chocolate chips and mini vegan marshmallows.

3. Heat in microwave for 60 seconds (use 20-second increments)

4. Add your favorite toppings and enjoy!
