Vegan Pumpkin Chocolate Chip Waffles

How to make pumpkin chocolate chip waffles that are healthy, vegan, and super tasty! These waffles are gooey, warm, and the perfect cozy breakfast or treat for the fall season.

Hello everyone and welcome back to my blog! I am so excited to share this new fall recipe with you all, because I love pumpkin and I’m a sucker for waffles. I recently bought this Dash mini waffle maker that I absolutely love, and I highly recommend purchasing it if you’re in need of a good waffle maker. You can make cute little waffles with it, and it’s super inexpensive.


Fall is my favorite season, and I love making warm and cozy breakfasts during this time. I recently made banana chocolate chip waffles that turned out incredibly well, which is what inspired me to make a recipe for pumpkin waffles. Pumpkin and chocolate go so well together, so I of course had to add chocolate chips to this pumpkin waffle recipe.


If you love pumpkin breakfasts, you should definitely make these pumpkin waffles. It yields two waffles (perfect for one person), and you can make them in no time at all. I cooked each waffle in my Dash mini waffle cooker for 4 minutes and they were nice and crispy.


I added creamy peanut butter with walnuts and pure maple syrup on top, but you could also add nut butter, coconut flakes, or any other topping you’d like!


Ingredients you’ll need:

1. Rolled Oats

The first ingredient you’ll need to make these delicious pumpkin chocolate chip waffles is rolled oats. You’ll want to add 1/2 cup of rolled oats to a blender or NutriBullet, and this will serve as your base for the waffles. Rolled oats are great to add to recipes because they’re super affordable and highly nutritious. Oats are rich in carbs and keep you full for long periods of time.


2. Baking Powder

You’ll also need 1/4 tsp of baking powder. I usually add baking powder to my recipes because it helps make them rise.


3. Cinnamon

Next, you’ll need 1/4 tsp of cinnamon. I love cinnamon during the fall time–it adds the perfect flavor to any fall treat you’re making.


4. Pumpkin Pie Spice

You’ll also need 1/2 tsp of pumpkin pie spice. These wouldn’t be pumpkin waffles without pumpkin pie spice, so be sure to add it to your pumpkin batter! I love pumpkin pie spice during the fall season and I’ve been using it so much lately.


5. Nut Milk (I used unsweetened vanilla almond milk)

You’ll also need a nut milk of your choice. I used unsweetened vanilla almond milk, but you can use any plant-based milk that you’d like. I also really like oat milk, silk milk, and soy milk, but using a nut milk makes the batter creamy, which is why I prefer using a nut milk instead of water.


6. Canned Pumpkin

Next, you’ll need canned pumpkin, Canned pumpkin isn’t very sweet on its own, but added with other ingredients, it’s incredibly tasty. Canned pumpkin helps make the waffles fluffy and moist, and it adds a strong pumpkin flavor.


7. Pure Maple Syrup

The next ingredient you’ll need is pure maple syrup. The recipe calls for 1/2 tbsp of pure maple syrup, but you can use as much or as little as you’d like. If you want your waffles sweeter, feel free to add more. I also drizzled a bit of maple syrup on top of my waffles after they had finished cooking, but you can add more syrup in the pumpkin batter as well.


8. Mini Chocolate Chips (Vegan)

The last ingredient you’ll need is mini vegan chocolate chips. Since these are pumpkin chocolate chip waffles, I sprinkled a few mini chocolate chips into the batter. I also added a few on top and it added the perfect hint of sweetness.

Ingredients
  

  • 1/2 cup rolled oats
  • 1/4 tsp baking powder
  • 1/4 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1/2 cup nut milk (I used unsweetened vanilla almond milk)
  • 2 tbsp canned pumpkin
  • 1/2 tbsp pure maple syrup
  • 1 tsp mini chocolate chips (vegan)

Instructions
 

  • Blend rolled oats, baking powder, cinnamon, pumpkin pie spice, nut milk, canned pumpkin and pure maple syrup in a blender to form a thick and creamy consistency
  • Fold in mini vegan chocolate chips
  • Cook waffles in a waffle maker (I used my Dash mini waffle maker and cooked each waffle for 4 minutes)
  • Add toppings and enjoy!
