This recipe is for a soft-bake cookie cake. I absolutely love cookie cake and always have, so I was inspired to make a vegan version of one of my favorite desserts. This cookie cake is made with simple ingredients including rolled oats, almond milk, coconut oil, chocolate chips, peanut butter, vanilla extract, coconut flour, maple syrup, and baking soda.



Chocolate chips are an essential ingredient in cookie cake, and the peanut butter creates the perfect texture for this soft-bake cookie cake. You could also add a frosting to the cookie cake if you want extra sweetness.




Ingredients

  • Rolled Oats: The first ingredient you need is rolled oats. Blend rolled oats in a blender to make oat flour.
  • Almond Milk: The next ingredient you need is almond milk, or a nut milk of your choice. This recipe calls for 1/2 cup of almond milk. I used unsweetened vanilla almond milk in this recipe.
  • Coconut Oil: The next ingredient is coconut oil. This recipe calls for 1 tsp of coconut oil.
  • Chocolate Chips: The next ingredient you need is chocolate chips. Chocolate chips are an essential ingredient in cookie cake. This recipe calls for 2 tbsp of chocolate chips, but feel free to add more.
  • Peanut Butter: The next ingredient you need is peanut butter. This recipe calls for 2 tbsp of peanut butter to make the cake soft.
  • Vanilla Extract: You also need vanilla extract.
  • Coconut Flour: The next ingredient is coconut flour. This recipe calls for 2 tbsp of coconut flour.
  • Maple Syrup: To sweeten this chocolate chip cookie cake, you need maple syrup. Maple syrup is a natural sweetener and is super sweet, which is the perfect ingredient for using in dessert recipes.
  • Baking Soda: The last ingredient you need is baking soda. This recipe calls for 1/2 tsp of baking soda.

Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup almond milk
  • 1 tsp coconut oil
  • 2 tbsp vegan chocolate chips
  • 2 tbsp peanut butter
  • 1/4 tsp vanilla extract
  • 2 tbsp coconut flour
  • 2 tbsp maple syrup
  • 1/2 tsp baking soda

Instructions
 

  • Preheat oven to 350°
  • Blend 1 cup of rolled oats in a blender to form oat flour
  • Combine dry ingredients to one bowl: oat flour, coconut flour, and baking soda
  • Melt 1 tsp of coconut oil until softened
  • Combine wet ingredients to a seperate bowl: coconut oil, peanut butter, almond milk, vanilla extract, and maple syrup
  • Slowly fold dry ingredinets to wet ingredients
  • Fold in chocolate chips
  • Spray cake pan with olive oil spray
  • Fold in cookie batter
  • Bake in oven at 350° for 15 minutes
