- 1 cup rolled oats
- 1/2 cup almond milk
- 1 tsp coconut oil
- 2 tbsp vegan chocolate chips
- 2 tbsp peanut butter
- 1/4 tsp vanilla extract
- 2 tbsp coconut flour
- 2 tbsp maple syrup
- 1/2 tsp baking soda
Preheat oven to 350°
Blend 1 cup of rolled oats in a blender to form oat flour
Combine dry ingredients to one bowl: oat flour, coconut flour, and baking soda
Melt 1 tsp of coconut oil until softened
Combine wet ingredients to a seperate bowl: coconut oil, peanut butter, almond milk, vanilla extract, and maple syrup
Slowly fold dry ingredinets to wet ingredients
Fold in chocolate chips
Spray cake pan with olive oil spray
Fold in cookie batter
Bake in oven at 350° for 15 minutes
