Vegan Black Bean Sweet Potato Veggie Burgers

The BEST veggie burgers you will ever try! These burgers are super fresh and made with healthy ingredients. Black bean burgers are one of my favorite veggie burgers, so I decided to throw together a recipe for vegan black bean sweet potato veggie burgers.

One of my go-to meals is a veggie burger with all the fixings. It’s an easy way to eat a lot of vegetables and foods that nourish your body. If you like black beans and sweet potatoes, then you will absolutely love these veggie burgers.

I absolutely love veggies burgers and wanted to make a healthier alternative to the processed patties people often buy at grocery stores. These veggie burgers are 100% plant-based and have NO added oils. I love black beans and sweet potatoes, so I thought why not put my two favorite foods in a recipe together!No, but seriously–this is the best concoction. 

These veggie burgers taste raw and fresh. Most of the veggie burgers I’ve had that were pre-made didn’t taste very fresh or authentic. These burgers are different. They are very nutritious and best of all, 100% plant-based. Give them a try–you won’t be disappointed. This is a super healthy and nutritious meal idea for not only vegans, but non-vegans as well. These do NOT disappoint! 



Ingredient’s you’ll need for this recipe:

1. Black Beans

The main ingredient you need for these black bean sweet potato burgers are black beans. You can either use black beans in the can or make black beans from scratch.

I used canned black beans because it’s more time consuming if you make them from scratch. Although it’s probably healthier to make them yourself, if you don’t have a lot of time on your hands, using canned black beans will suffice.

Black beans are super nutritious and delicious. Black beans are a great source of both protein and iron, so if you’re lacking either protein or iron in your diet, you should definitely try making these black bean burgers!


2. Sweet Potato

Next up is sweet potatoes. I rarely ate sweet potatoes before I was vegan. If I ever ate a potato, it was a regular potato as opposed to a sweet potato.

However, after I went vegan, I started eating more fruits and vegetables, including sweet potatoes. I prefer sweet potatoes over regular potatoes because they’re sweeter and have more flavor.

I love adding hummus and avocado to my sweet potatoes whenever I make them. But for this recipe, you only need one large sweet potato. This along with the beans is the bulk of the ingredients you need to make the veggie burgers.


3. Garlic Powder

One of the seasonings you need for this recipe is garlic powder. Garlic powder is my favorite spice to use–I add it to pretty much every meal I make. It’s a super flavorful spice and can make any bland food taste good.

If you haven’t used garlic powder in your dishes before, I highly suggest you start using it. I never used to use spices to cook, but when I started adding more spices to my dishes, it made them taste even better.


4. Onion Powder

In addition to garlic powder, you’ll need onion powder for this recipe. Whenever I add garlic powder to my dishes, I almost always add onion powder as well. I really like both of the spices together, and it truly makes a difference.


5. Fresh Spinach

Next up is fresh spinach. These veggie burgers are jammed pack with nutrients, and so of course I had to throw spinach into the mix. Spinach is a great source of iron, but you can’t even taste the spinach in these burgers.

It’s great for people who dislike the taste of spinach but want to get the nutrients from spinach. I like adding spinach to smoothies and smoothie bowls because you can’t even taste the spinach. The fruit and peanut butter in my smoothies always masks the spinach flavor.


6. Chopped Onion

The next ingredient is chopped onion. Onion has a super strong and distinct flavor, so I only added a little bit of onion to the recipe. I personally don’t like a ton of onion, but you can certainly add a bit more if you’re someone who loves the taste of onion.


7. Chopped Tomato

Next we have chopped tomato. I love tomatoes, and it’s another vegetable that I try and add to my dishes whenever I can. Someone once told me that the best meal to have is one that’s super colorful. Thus, I try to emulate having a colorful plate whenever possible.


8. Oat Flour

Rather than using breadcrumbs, I opted to use oat flour instead. It’s a bit healthier than bread crumbs and is a great alternative if you’re looking for a healthier option. All you do to make oat flour is blend rolled oats in a blender. It takes less than a minute to blend the oats together and is super easy to make.


9. Salt & Pepper

I like to add a dash of salt and pepper to my meals to give them a bit more flavor. For this recipe, you can certainly add a bit more salt and pepper if you prefer, but I don’t like adding a ton of salt to my recipes.

Ingredients
  

  • 1 1/2 cans black beans
  • 1 large sweet potato
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 2 cups fresh spinach
  • 1 tbsp chopped onion
  • 1/4 cup chopped tomato
  • 1/2 cup oat flour
  • pinch salt
  • pinch pepper

Instructions
 

  • Preheat oven to 350°
  • Cook one large sweet potato in the microwave for 5 minutes or until softened
  • Drain excess liquid from canned black beans
  • Blend black beans, sweet potato, garlic powder, onion powder, spinach, onion, tomato oat flour, and salt and pepper in a food processor 
  • Lay parchment paper on baking sheet 
  • Form 9 patties on parchment paper
  • Bake for 30 minutes in oven 
  • Leave in fridge for about an hour 
  • Enjoy!

Final Thoughts

If you like veggie burgers, I highly recommend trying this black bean sweet potato burger recipe out. These burgers taste super fresh, which is what I was aiming for. Sometimes when you buy a frozen burger from the supermarket, it doesn’t taste super fresh.

The prep time is also super short. All you have to do is be a little patient for these burgers to bake in the oven. You can enjoy it as it is or with a bun! It’s delicious either way.
