Vegan Black Bean Sweet Potato Veggie Burgers

- 1 1/2 cans black beans
- 1 large sweet potato
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 2 cups fresh spinach
- 1 tbsp chopped onion
- 1/4 cup chopped tomato
- 1/2 cup oat flour
- pinch salt
- pinch pepper
Preheat oven to 350°
Cook one large sweet potato in the microwave for 5 minutes or until softened
Drain excess liquid from canned black beans
Blend black beans, sweet potato, garlic powder, onion powder, spinach, onion, tomato oat flour, and salt and pepper in a food processor
Lay parchment paper on baking sheet
Form 9 patties on parchment paper
Bake for 30 minutes in oven
Leave in fridge for about an hour
