How to Make Vegan Peanut Butter Soft-Bake Cookies

These vegan peanut butter soft-bake cookies are the perfect delectable treat to make for any occasion. These cookies are soft and delicious.

For today’s recipe, I wanted to recreate one of my favorite cookies: peanut butter soft-bake cookies. Peanut butter is one of my favorite foods, and I’ve always loved peanut butter cookies. These cookies are easy to make, and only take 13 minutes to bake in the oven. Allow 5-10 minutes for the cookies to cool.

Ingredients

  • Rolled Oats: The first ingredient you need is rolled oats. Blend 1/2 cup rolled or instant oats in a blender to form oat flour. Then, fold in an additional 2 tbsp of rolled oats.
  • Peanut Butter: The next ingredient you need is peanut butter. I used creamy peanut butter to make these cookies, but you can also use crunchy peanut butter instead. Some of my favorite peanut butters are Krema and Smucker’s Creamy Natural Peanut Butter.
  • Maple Syrup: The next ingredient is maple syrup. I like using maple syrup in dessert recipes because it’s incredibly sweet and adds the perfect amount of sweetness. This recipe calls for 2 tbsp maple syrup.
  • Vanilla Almond Milk: You also need 1/4 cup nut milk. I used unsweetened vanilla almond milk for this recipe.
  • Applesauce: Next, you need 2 tbsp of applesauce. I used unsweetened applesauce.
  • Mini Chocolate Chips: The next ingredient you need is mini chocolate chips. I like using mini chocolate chips because they’re super sweet. I used Enjoy Life mini chocolate chips in this recipe. Another one of my favorite vegan chocolate baking chips are Lilly’s.
  • Vanilla Extract: For this recipe, you need a splash of vanilla extract.
  • Baking Powder: The last ingredient you need is baking powder. This recipe calls for 1/2 tsp baking powder.

Vegan Peanut Butter Soft-Bake Oatmeal Cookies

Ingredients
  

  • 1/2 tsp vanilla extract
  • 1/2 cup rolled oats
  • 1/4 cup peanut butter
  • 2 tbsp maple syrup
  • 1/2 tsp baking powder
  • 1/4 cup almond milk
  • 2 tbsp applesauce
  • 2 tbsp rolled oats
  • 1/4 cup vegan chocolate chips

Instructions
 

  • Preheat oven to 350°
  • Blend oat meal in a food processor to form oat flour
  • Combine dry ingredients together: oat flour, regular oats, and baking powder
  • Combine wet ingredients in a separate bowl: vanilla extract, peanut butter, maple syrup, almond milk, and apple sauce
  • Slowly fold in wet ingredients to dry ingredients
  • Slowly fold in vegan chocolate chips
  • Bake at 350° for 13 minutes
  • Let cool for 10-20 minutes and enjoy!
