How to Make Vegan Chocolate Chip Oatmeal Cookies

Here’s how you can make vegan chocolate chip soft-bake oatmeal cookies. One of my favorite desserts has always been oatmeal cookies, and these chocolate chip oatmeal cookies are no exception.

I wanted to make a batch of chocolate chip oatmeal cookies because oatmeal cookies are seriously so good. I’ve always loved oatmeal cookies–especially chocolate chip oatmeal cookies.


Let’s get into the ingredients you need to make these delectable cookies.


Ingredients

  • Vanilla Extract: You need just a hint of vanilla extract for this recipe, but a little goes a long way. I love adding a splash of vanilla to my dessert recipes.
  • Rolled Oats: The next ingredient you need for this recipe is rolled oats. I like using oats in my dessert recipes because oats are pretty inexpensive. Blend rolled or instant oats in a blender to form oat flour. Fold in an additional 2 tbsp of rolled oats.
  • Peanut Butter: Peanut butter helps with the consistency of the cookies. I like using creamy peanut butter because it mixes well in the cookie batter and adds a peanut flavor to the cookies. Feel free to use crunchy peanut butter instead. This recipe calls for 1/4 cup of peanut butter. Some of my favorite peanut butters are Krema and Smucker’s Creamy Natural Peanut Butter.
  • Maple Syrup: To sweeten these cookies, you need 1 tbsp of maple syrup. Maple syrup is one of my favorite sweeteners to use because it’s incredibly sweet.
  • Baking Powder: This recipe calls for 1/2 tsp baking powder.
  • Cocoa Powder: Cocoa powder is the next ingredient you need. Cocoa powder is essential in making these cookies extra chocolatey. I used 1 tbsp Hershey’s unsweetened cocoa powder for this recipe.
  • Almond Milk: The next ingredient you need is almond milk, or a plant-based milk alternative. This recipe calls for 1/4 cup of nut milk.
  • Applesauce: Next, you need 2 tbsp applesauce.
  • Chocolate Chips: The last ingredient you need is chocolate chips. Some of my favorite vegan chocolate chips are Lily’s and Enjoy Life mini chocolate chips. Chocolate chips are an essential ingredient for this recipe. I folded chocolate chips into the batter and sprinkled some on top for additional sweetness.

Ingredients
  

  • 1/2 tsp vanilla extract
  • 1/2 cup rolled oats
  • 1/4 cup peanut butter
  • 1 tbsp maple syrup
  • 1/2 tsp baking powder
  • 1 tbsp cocoa powder
  • 1/4 cup almond milk
  • 2 tbsp applesauce
  • 2 tbsp rolled oats
  • 1/4 cup vegan chocolate chips

Instructions
 

  • Preheat oven to 350°
  • Blend rolled oats in a food processor to form oat flour
  • Combine dry ingredients together: oat flour, regular oats, and baking powder
  • Combine wet ingredients in a separate bowl: vanilla extract, peanut butter, maple syrup, almond milk, and apple sauce
  • Slowly fold in wet ingredients to dry ingredients
  • Slowly fold in vegan chocolate chips
  • Bake at 350° for 13 minutes
  • Let cool for 10-20 minutes and enjoy!
