Vegan Chocolate Chip Soft-Bake Oatmeal Cookies

- 1/2 tsp vanilla extract
- 1/2 cup rolled oats
- 1/4 cup peanut butter
- 1 tbsp maple syrup
- 1/2 tsp baking powder
- 1 tbsp cocoa powder
- 1/4 cup almond milk
- 2 tbsp applesauce
- 2 tbsp rolled oats
- 1/4 cup vegan chocolate chips
Preheat oven to 350°
Blend rolled oats in a food processor to form oat flour
Combine dry ingredients together: oat flour, regular oats, and baking powder
Combine wet ingredients in a separate bowl: vanilla extract, peanut butter, maple syrup, almond milk, and apple sauce
Slowly fold in wet ingredients to dry ingredients
Slowly fold in vegan chocolate chips
Bake at 350° for 13 minutes
Let cool for 10-20 minutes and enjoy!
