Homemade Vegan Peanut Butter Chocolate Chip Cookies

In today’s post I’m sharing my homemade peanut butter chocolate chip cookie recipe. I was really excited to make this recipe because peanut butter and chocolate are my two favorite things–I seriously love peanut butter and chocolate together.

Chocolate chip cookies are a classic, and you can’t go wrong with these soft-bake cookies. This recipe yields 8 small cookies. This is the perfect warm and cozy treat to make if you want something sweet. It’s an easy recipe to make as well.


Ingredients

  • Whole Wheat Flour: The first ingredient you need to make this batch of homemade peanut butter chocolate chip cookies is whole wheat flour. This recipe also calls for oat flour, and I typically use a combination of whole wheat flour and oat flour in my recipes.
  • Oat Flour: The next ingredient you need is oat flour. Oat flour is one of my favorite flours to use in dessert recipes. Blend rolled or quick oats in a blender to form a flour-like consistency.
  • Creamy Peanut Butter: The next ingredient you need is creamy peanut butter. Feel free to use crunchy peanut butter instead. Some of my favorite peanut butters are Krema and Smucker’s Creamy Natural Peanut Butter.
  • Maple Syrup: To sweeten these cookies, you need 1 tbsp pure maple syrup. I like using maple syrup in my dessert recipes because maple syrup is very sweet and adds the perfect amount of sweetness.
  • Chocolate Chips: Next, you need chocolate chips. I really love chocolate chips so I added a pretty generous amount to each cookie. Some of my favorite vegan chocolate chips are Enjoy Life’s vegan baking chips and Lily’s chocolate chips.
  • Baking Powder: You also need baking powder. This recipe calls for 1/2 tsp baking powder.
  • Applesauce: The next ingredient is applesauce. I like using applesauce to sweeten desserts because it adds additional sweetness.
  • Almond Milk: The last ingredient is almond milk, or a plant-based milk alternative.

Ingredients
  

  • 1/2 cup whole wheat flour
  • 1/4 cup oat flour
  • 1/4 cup creamy peanut butter
  • 1 tbsp pure maple syrup
  • 1 tbsp vegan chocolate chips
  • 1/2 tsp baking powder
  • 3 tbsp applesauce
  • 3 tbsp almond milk

Instructions
 

  • Preheat oven to 350°
  • Add dry ingrdients to a large mixing bowl: whole wheat flour, oat flour and baking soda
  • Whisk together wet ingredinets in a separate mixing bowl: creamy peanut butter, pure maple syrup, apple sauce and almond milk
  • Fold wet ingredients into dry ingrdeints until you have a sticky dough
  • Line a baking sheet with parchment paper
  • Fold dough into 8 small cookies (note dough is sticky so you may have to use flour to fold dough into cookie shapes)
  • Add mini chocolate chips to each cookie
  • Bake in oven for 15 minutes at 350°
  • Let cool and enjoy!

Notes

*The dough is pretty sticky, so you may need to add flour to your hands when forming the 8 cookies
