It’s the beginning of November and we’re starting to enter the colder months of the year. I don’t know about you, but I love making warm and cozy breakfasts during the fall and winter months. One of my favorite cozy breakfasts to make is pancakes, and while I already have a few pancake recipes on my blog, I wanted to share a chocolate chip pancake recipe for anyone who has a sweet tooth and loves chocolate like myself.
These vegan chocolate chip pancakes couldn’t be easier to make, and to top that, they’re incredibly delicious. They’re moist, fluffy, sweet, and have a strong chocolate flavor. I used my mini Dash pancake maker which I absolutely love. It’s a kitchen gadget that I’ve been using to make pancakes ever since buying it.
It only takes a few minutes to cook each pancake, and what’s better than cute and tiny pancakes? The Dash mini griddle is also compact, which is great for traveling.
I topped my pancakes with banana slices, chocolate chips, creamy peanut butter, and a splash of pure maple syrup. Pure maple syrup adds the perfect amount of sweetness to your pancakes, and it’s my personal favorite sweetener to use. You could add additional toppings as well, so go crazy with it.
Ingredients You’ll Need:
1. Rolled Oats
The first ingredient you’ll need to make these chocolate chip pancakes is rolled oats. I use rolled oats in pretty much all of my pancake recipes because it serves as the perfect flour/base for making pancakes.
2. Baking Powder
Next, you’ll need 1/4 tsp of baking powder. Baking powder helps make the pancakes rise and makes them fluffier.
3. Nut Milk
You’ll also need a nut milk of your choice. I used unsweetened vanilla almond milk, which is my favorite plant-based milk, but you could use any nut milk that you’d like. I prefer to use a nut milk over water because it makes the batter creamier, but water will work as well.
4. Banana
The next ingredient you’ll need is banana. Adding banana to the pancake batter makes the batter sweeter and creates the perfect consistency.
5. Chocolate Chips (Vegan)
The last ingredient you’ll need to make these chocolate chip pancakes is the chocolate chips. There are so many vegan chocolates chips you can buy, so feel free to use your favorite vegan chocolate baking chips. I have been buying chocolate chips from both Aldi and Trader Joe’s lately, but they sell them elsewhere as well. Some of my favorite vegan chocolate chips are Lily’s baking chips and Enjoy Life’s mini chocolate chips.
Toppings:
1. Banana Slices
For the toppings, I added banana slices to my pancakes. I love banana and it’s one of my favorite fruits to eat. It’s the perfect fruit topping for pancakes, and I highly recommend adding some additional banana slices on top of your pancakes.
2. Pure Maple Syrup
Next, you’ll need a splash of pure maple syrup. This is an optional topping, but if you’re craving super sweet pancakes, then I recommend adding a bit of maple syrup on top. Maple syrup goes so well with pancakes and waffles.
3. Creamy/Crunchy Peanut Butter
Next, you’ll need either creamy or crunchy peanut butter. I typically buy creamy peanut butter, but on occasion I use crunchy. I drizzled some creamy peanut butter on top of my pancakes and it added the perfect nutty flavor. Peanut butter is also high in protein.
4. Chocolate Chips (Vegan)
The last topping you’ll need is vegan chocolate chips. In addition to adding chocolate chips to the pancake batter, I also sprinkled a few on top. They melt on top of the warm pancakes and it adds additional sweetness as well.
