Homemade Vanilla Protein Oat Muffins

Vegan vanilla protein oat muffins made from scratch.

I usually dedicate an hour or two on Saturday/Sunday for baking, and I decided to make a batch of these vegan vanilla protein oat muffins. I recently posted a recipe for chocolate chip protein oat muffins, and I wanted to create a similar recipe inspired by those muffins.

These vanilla muffins are super fluffy, soft, and delicious. Some of the ingredients you need include oat flour, vanilla protein powder (I used Orgain), baking powder, baking soda, vanilla extract, banana, almond milk, and truvia baking blend. These ingredients are simple and affordable, which is the goal for all of my recipes.


Ingredients

  • Rolled Oats: The first ingredient you need to make these delicious vanilla protein muffins is rolled oats. Blend 1/2 cup of rolled oats in a blender or food processor to form a flour-like consistency.
  • Vanilla Protein Powder: You also need vanilla protein powder. I used Orgain’s vanilla protein powder, which is a plant-based protein powder. You can use any vanilla protein powder you want for this recipe. It helps add a strong vanilla flavor to the muffins and adds protein. This is great to have for breakfast or as a snack throughout the day.
  • Baking Soda & Baking Powder: Next, you need 1 tsp of baking powder and baking soda. This helps the muffins rise.
  • Ripe Banana: The next ingredient you need is 1 ripe banana. The riper the banana, the sweeter it tends to be. I used a medium sized banana and mashed it in a bowl. I then added the remaining wet ingredients and whisked all of the ingredients together. Adding fruit like banana to your recipes is a great way to make them sweeter. Some of my other favorite fruits to use in dessert recipes are dates and applesauce.
  • Truvia Baking Blend: To sweeten these vanilla muffins, you need truvia baking blend. I used 1 tbsp, but if you want your muffins extra sweet, you can add more.
  • Almond Milk: You also need almond milk, or a plant-based milk alternative. I used unsweetened vanilla almond milk in this recipe, but you could also use silk milk, soy milk, or oat milk.
  • Vanilla Extract: The next ingredient you need is vanilla extract.
  • Rainbow Sprinkles (Optional): The last ingredient you need are rainbow sprinkles. You can add rainbow sprinkles on top of your muffins (or in the actual batter) for some additional sweetness and for decoration. I like adding a few sprinkles on top because it adds sweetness.

Ingredients
  

  • 1/2 cup rolled oats
  • 3 tbsp vanilla protein powder (I used Orgain)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 ripe banana
  • 1-2 tbsp truvia baking blend (add 2 for additional sweetness)
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • 1 tsp rainbow sprinkles (optional)

Instructions
 

  • Preheat oven to 350°
  • Blend rolled oats in a NutriBullet or food processor to form a flour-like consistency
  • Combine all dry ingredients to a large mixing bowl: oat flour, vanilla protein powder, baking soda, baking powder and truvia baking blend
  • Whisk together wet ingredients in a separate bowl: ripe banana, almond milk and vanilla extract
  • Slowly fold wet ingredients into dry ingredients
  • Lightly grease a muffin pan with olive oil
  • Add muffin batter to form 4 muffins
  • Bake for 12 minutes at 350°
  • Let cool and enjoy!

These vanilla protein muffins were so easy to make and turned out great. They are fluffy and delicious, and this is a recipe that I will definitely be making again.
