- 1/2 cup rolled oats
- 3 tbsp vanilla protein powder (I used Orgain)
- 1 tsp baking soda
- 1 tsp baking powder
- 1 ripe banana
- 1-2 tbsp truvia baking blend (add 2 for additional sweetness)
- 1/4 cup almond milk
- 1 tsp vanilla extract
- 1 tsp rainbow sprinkles (optional)
Preheat oven to 350°
Blend rolled oats in a NutriBullet or food processor to form a flour-like consistency
Combine all dry ingredients to a large mixing bowl: oat flour, vanilla protein powder, baking soda, baking powder and truvia baking blend
Whisk together wet ingredients in a separate bowl: ripe banana, almond milk and vanilla extract
Slowly fold wet ingredients into dry ingredients
Lightly grease a muffin pan with olive oil
Add muffin batter to form 4 muffins
Bake for 12 minutes at 350°
Let cool and enjoy!
