Homemade Double Chocolate Chip Cookies

These homemade double chocolate chip cookies are extra chocolatey and serve as the perfect treat for any occasion. Here’s how you can make vegan double chocolate chip cookies.

Good morning everyone! I hope you are all having a fantastic Thursday. I am a huge fan of cookies, but especially soft-bake cookies. I wanted to make a fun cookie recipe inspired by my favorite type of cookies–nothing comes close to cookies that melt in your mouth. This recipe is super easy to make and calls for less than 10 ingredients, (9 to be exact).


Ingredients

  • Rolled Oats: The first ingredient you need for this recipe is rolled oats. This recipe calls for 1/2 cup rolled oats. Blend the oats in a blender or NutriBullet to form a flour-like consistency.
  • Whole Wheat Flour: The next ingredient you need is whole wheat flour. I like to mix whole wheat flour and oat flour for some of my recipes. This recipe calls for 1/4 cup whole wheat flour.
  • Vanilla Extract: The next ingredient is vanilla extract. This recipe calls for 1 tsp vanilla extract.
  • Creamy Natural Peanut Butter: The next ingredient is creamy natural peanut butter. You could use crunchy peanut butter instead if you want peanut chunks in your cookies. Two of my favorite peanut butters are Krema and Smucker’s Natural Creamy Peanut Butter. I really like these two peanut butters because they only contain peanuts, or peanuts and salt.
  • Baking Powder: You also need 1/2 tsp of baking powder for this recipe.
  • Cocoa Powder: Cocoa powder is an essential ingredient for chocolate cookies. This recipe calls for 2 tbsp cocoa powder. I used unsweetened cocoa powder.
  • Maple Syrup: Next, you need maple syrup. I often use maple syrup to sweeten my recipes because maple syrup is super sweet. You need 3 tbsp maple syrup for this recipe.
  • Chocolate Chips: The next ingredient you need is vegan chocolate chips. I love using the mini chocolate chips because they’re extra sweet. Some of my favorite vegan chocolate chip brands are Enjoy Life and Lily’s baking chips.
  • Almond Milk: The last ingredient you need is almond milk, or a plant-based milk alternative. I used unsweetened vanilla almond milk for this recipe, but you can use oat milk, soy milk, silk milk, or water.

Ingredients
  

  • 1/2 cup rolled oats
  • 1/4 cup whole wheat flour
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 2 tbsp creamy peanut butter
  • 2 tbsp cocoa powder
  • 3 tbsp pure maple syrup
  • 1 tbsp chocolate chips (vegan)
  • 3 tbsp almond milk

Instructions
 

  • Preheat oven to 350°
  • Blend rolled oats in a blender or NutriBullet to form a flour-like consistency
  • Add dry ingredients to a large mixing bowl: oat flour, whole wheat flour, baking powder and cocoa powder
  • Wisk together wet ingredient in a separate mixing bowl: vanilla extract, creamy peanut butter, maple syrup and almond milk
  • Add wet ingredients into dry ingredients
  • Fold in mini chocolate chips
  • Line a baking sheet with parchment paper
  • Form 6 cookies on a baking sheet
  • Bake in oven at 350° for 10 minutes
