Hello everyone and happy Thursday! I hope you are all having a wonderful week. In today’s post, I’m going to be sharing with you all this delicious peanut butter granola recipe. This recipe calls for 4 simple ingredients, and only takes 10 minutes to bake in the oven. The ingredients you’ll need are rolled oats, vanilla extract, creamy natural peanut butter, and pure maple syrup. You really can’t go wrong with peanut butter and maple syrup–it’s the perfect concoction for any dessert recipe. It’s also the perfect treat to make if you want something that’s both salty and sweet.

Granola is a staple food of mine and is great to have as a snack or to add to your breakfast in the mornings. I’ve been making a lot of smoothie bowls lately because it’s been getting warmer here, and adding granola on top is the icing on the cake. But for now, let’s talk about this yummy vegan peanut butter granola recipe. If you love peanut butter, you’ll absolutely love this peanut butter granola recipe. This is a great snack that’s high in protein and carbs.


Ingredients you’ll need to make this peanut butter granola:

1. Rolled Oats

The first ingredient you’ll need to make this delicious peanut butter granola recipe is rolled oats. This recipe is super budget-friendly and affordable, which is great for college students or anyone looking to save some extra cash. You can buy a large container of rolled oats for only a few dollars at the grocery store, and it can last up to weeks or even months. Rolled oats are also super versatile and can be use to make oatmeal, mug cakes, and other baked goods. Rolled oats are a staple in my kitchen pantry, and they’re also super filling.


2. Vanilla Extract

You’ll also need a splash of vanilla extract–1 tsp to be exact. This is a common ingredient used in recipes, and is one of the ingredients I often use in my dessert recipes. Vanilla extract is pretty strong, so a little goes a long way.


3. Pure Maple Syrup

The next ingredient you’ll need is pure maple syrup. In my dessert recipes and breakfast recipes, I try and use either pure maple syrup or a fruit such as banana, applesauce, or dates to sweeten them. Pure maple syrup is a natural sweetener, and is a great alternative to traditional table sugar. Pure maple syrup is also super strong and powerful, so you really don’t need to use a lot of it to sweeten your desserts. For this recipe, you’ll need 1 tablespoon of pure maple syrup. However, if you want your peanut butter granola super sweet, you can add more than what’s listed on the recipe card below.


4. Creamy Peanut Butter

The last ingredient you’ll need to make this peanut butter granola is creamy peanut butter. You could also use crunchy, but I prefer creamy peanut butter over crunchy peanut butter any day of the week. Peanut butter is another ingredient, like rolled oats, that’s pretty inexpensive. I typically get a jar of peanut butter for $2 from the grocery store. Some of my favorite creamy natural peanut butters include Krema and Smucker’s. They’re both made with natural ingredients and contain peanuts and salt. They don’t have any added sugars or oils.

Ingredients
  

  • 1 cup rolled oats
  • 1 tsp vanilla extract
  • 1 tbsp pure maple syrup
  • 2 tbsp + 1 tsp creamy peanut butter

Instructions
 

  • Preheat oven to 350°
  • Whisk together wet ingredients in a mixing bowl: vanilla extract, pure maple syrup and creamy peanut butter
  • Slowly add rolled oats to the wet mixture
  • Line a baking sheet with parchment paper
  • Pour peanut butter granola on baking sheet
  • Bake in oven at 350° for 10 minutes

This peanut butter granola is such an easy recipe that you can make in less than 15 minutes. You can even prep a large batch of granola on the weekends so it’s ready for the week to add to smoothies and smoothie bowls, cereal, or to just eat as a snack. It’s a yummy treat to make if you’re in the mood for something both salty and sweet. It has the perfect ratio of salty and sweet from the peanut butter and pure maple syrup.
