High Protein Vegan Lentil Soup

This warm and cozy vegan lentil soup is perfect for the fall and winter months. It’s packed with spices, veggies, and it’s high in protein!

As we’re getting into the colder months, I’m starting to make more warm and cozy meals. One of my favorite recipes to make during the fall and winter months is soup. I recently made a recipe for black bean soup on my blog, and I decided to make lentil soup because I had some vegetable broth that I needed to use up.

Soup takes a bit longer to prep and cook, however, it’s a great meal to make that’s healthy and will keep you nice and cozy during the colder months. This soup recipe is high in protein, vegan, and made with an assortment of vegetables and spices.

It’s made with lentils, tomatoes, onion, garlic, lettuce, carrots, and spices like cumin, turmeric, and garlic powder. This recipe is incredibly nutritious and delicious. I like to make a large batch of soup to meal prep because it’s easy to pack and bring with you to work.


Ingredients

  • Lentils: The first ingredient you need to make this tasty high protein lentil soup is lentils. Lentils are a great source of protein and they’re one of my favorite ingredients to add to my meals. I bought lentils from Trader Joe’s, but you can get them at other grocery stores as well.
  • Carrots: You also need carrots. I think carrots in soup is an essential ingredient, and it’s a vegetable I usually add to my soups. Carrots get really soft and taste delicious in soup.
  • Vegetable Broth: Next, you need vegetable broth. You could also use water, but I prefer to use vegetable broth in my soup recipes because it adds a salty flavor.
  • Onion: Next, you need onion. Like carrots, onion is an essential ingredient for making soup. I used 1/4 cup of onion in this recipe.
  • Garlic Cloves: I also added two garlic cloves. Garlic is really good for you, and it adds the perfect flavor to soup recipes.
  • Lettuce: You also need lettuce, kale, or spinach. Add as much or as little as you’d like. I threw in a handful of chopped lettuce to my soup.
  • Tomatoes: Next, you need 1/2 cup of tomatoes. I chopped up some baby tomatoes, but regular tomatoes will work as well.
  • Nutritional Yeast: This next ingredient I added to my soup is nutritional yeast. Nutritional yeast is almost like a vegan cheese alternative.
  • Garlic Powder: I also added an assortment of spices. Garlic powder is a spice I always use in my soup recipes. It adds a nice flavor and I personally love garlic.
  • Onion Powder: I also used onion powder. It’s another spice that I like to add to my soup recipes because it’s really tasty.
  • Turmeric: Turmeric is an orange/yellow spice that is a bit spicy.
  • Cumin: I also added a hint of cumin. It has a unique flavor and tastes well in soup recipes.
  • Salt & Pepper: Lastly, add a dash of salt and pepper. Add as much salt and pepper as you’d like. Salt to taste.

Ingredients
  

  • 1 cup lentils
  • 1 cup carrots
  • 3 3/4 cups vegetable broth
  • 1/4 cup onion
  • 2 garlic cloves
  • 1/4 cup lettuce
  • 1/2 cup tomatoes
  • 1 tbsp nutritional yeast
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp turmeric
  • 1/4 tsp cumin
  • dash salt & pepper

Instructions
 

  • Add all of the ingredients to a large pot
  • Bring soup to a boil
  • Cook on low-medium heat for 45 minutes or until the lentils have softened
  • Let cool and enjoy!
