High Protein Vegan Breakfast Sandwich on Sour Dough Toast
Here’s how you can make a high protein breakfast sandwich with simple ingredients. This recipe is vegan and super easy to make.

Hello everyone and welcome back to my blog! For today’s recipe, I’m sharing this vegan breakfast sandwich on sour dough bread with ingredients including spinach, tofu, nutritional yeast, avocado, tomato, and so on.
While I’m typically a sweet breakfast kind of girl, on occasion, I’m in the mood for something savory. Breakfast is a meal that I don’t typically have a lot of time to make, which is why the breakfast recipes on my blog are pretty simple and don’t take a lot of time to prep. This savory breakfast recipe is one of those recipes that I can easily make in the mornings before heading off to work.
I made this recipe the other day for breakfast and it was both filling and satisfying. And if you love avocado, tofu, nutritional yeast, tomato, spinach, etc., then you will definitely love this recipe.
You can easily make this recipe in 10-15 minutes! This recipe serves one, but feel free to double or triple the recipe if you want to make it for more than one person.
Ingredients You’ll Need:
- Tofu: The first ingredient you’ll need to make this breakfast sandwich is 1/4 cup of tofu. I cut my tofu up into small pieces before heating it on the pan. Tofu is a great source of protein and it’s one of my favorite foods to eat. I love adding tofu to my meals because it’s nutritious and delicious!
- Sour Dough Bread: Next, you’ll ned two slices of sour dough bread. I used sour dough bread that was relatively small, however, you can use any size of bread that you want. Sour dough bread has quickly become one of my favorite types of bread to eat, and it’s especially great for making breakfast sandwiches.
- Spinach: You’ll also need 1/4 cup of spinach. I try to add spinach to my diet each day because of how nutritious it is, and it’s great to add to recipes because you often can’t even taste it.
- Nutritional Yeast: The next ingredient you’ll need is nutritional yeast. This is an ingredient I try to eat everyday because it’s high in vitamin B12.
- Garlic Clove: I also used 1 garlic clove in this recipe. I personally love garlic which is why I tend to add it to all of my savory dishes. Garlic adds great flavor as well.
- Mushroom: You’ll also need 1 mushroom. Since this is a single serve recipe, I only used one mushroom, but you can add more if you’d like. You can add any other vegetable to this recipe as well.
- Garlic Powder: As for spices, you’ll want to add 1/4 tsp of garlic powder. As you can probably tell, I absolutely love garlic, so I added some garlic powder for some extra flavor.
- Turmeric: Next, you’ll need turmeric. Turmeric is another spice that I tend to add to my savory dishes, and it adds great flavor to this recipe as well.
- Salt & Pepper: Feel free to add as much or as little salt and pepper as you’d like. I used a dash of each.
- Avocado: I used about 1/4 of an avocado to spread on the sour dough toast before adding the tofu scramble filling. You can use more or less avocado depending on how much you want.
- Tomato: Lastly, you’ll want two large slices of tomato. I placed a tomato slice on each piece of sour dough toast to finish it off. It not only adds more nutrients, but it makes it more aesthetically pleasing as well!

High Protein Vegan Breakfast Sandwich on Sour Dough Toast
Ingredients
- 1/4 cup tofu
- 2 pieces sour dough toast
- 1/4 cup spinach
- 1 tsp nutritional yeast
- 1 garlic clove
- 1 mushroom
- 1/4 tsp garlic powder
- 1/4 tsp turmeric
- dash salt & pepper
- 1/4 avocado
- 2 slices tomato
Instructions
- Add tofu, spinach, nutritional yeast, garlic clove, mushroom, garlic powder, turmeric, salt and pepper to a pan
- Cook for 10-15 minutes on low-medium heat
- Heat two slices of sour dough toast in a toaster
- Spread thin layer of avocado on each piece of sour dough toast
- Add tofu mixture to both pieces of sour dough toast
- Garnish with tomato slice

Final Thoughts
