Easy Single Serving Vegan Strawberry Waffles

These strawberry waffles are perfect topped with creamy peanut butter, strawberries, a dash of cinnamon, and a tall glass of chilled nut milk.

One of my favorite breakfasts to make on a Saturday morning is a stack of waffles. I like to start my day with a filling and nutritious breakfast, and there’s nothing better than a stack of delicious vegan waffles! I also have more time on the weekends to make breakfast, and so I like to try out new recipes when I have a little more time on my hands.

I love making waffles because they’re so easy to make and they taste delicious. Ever since I bought my Dash mini waffle maker, I can’t stop making waffles. It only takes around four minutes for each waffle to cook, and it’s definitely one of my best purchases I’ve ever made. It was incredibly cheap as well, which makes it even better.

Strawberries are also one of my favorite fruits. They’re super sweet and when they’re in season, they’re absolutely incredible. If you don’t like strawberries or strawberry-flavored recipes, feel free to check out my other waffle recipes.

This waffle recipe also has no added sugar. Theses strawberry waffles are naturally sweetened with banana and strawberries, and although you can add maple syrup or another sweetener of your choice, I personally think they are super sweet with just the fruit.

I topped my waffles with creamy peanut butter, cinnamon, and additional strawberries. It was such a tasty breakfast and super filling. I also made these waffles with oats, and as you probably know by now, I absolutely love oats. I add oats to all of my pancake, waffle, and dessert recipes.


Ingredients You’ll Need:

  • Rolled Oats: The first ingredient you’ll need is 1/2 cup of rolled oats. I often use rolled oats in my pancake and waffle recipes because it serves as a great base. It’s an ingredient I use in place of whole wheat flour.
  • Baking Powder: Next, you’ll need 1/4 tsp of baking powder.
  • Cinnamon: You’ll also need 1/4 tsp of cinnamon. I love cinnamon and I almost always add it to my sweet breakfast recipes. Cinnamon has a strong flavor and adds a nice touch to the waffles.
  • Banana: The next ingredient you’ll need is 1/4 of a banana. I decided to use banana and strawberries to sweeten this waffle recipe instead of maple syrup or another sweetener. Banana is a great ingredient to add to pancake and waffle recipes, and you’ll notice it’s in almost all of my breakfast recipes on my blog. It’s not only sweet, but it makes the batter creamier.
  • Strawberries: You’ll also need 1/4 cup of chopped strawberries. I blended the strawberries in the batter to give it a stronger strawberry flavor. You can gently fold some strawberry pieces into the batter as well. I also topped my waffles with additional strawberries for an extra hint of strawberry flavor.
  • Nut Milk: I used unsweetened vanilla almond milk for this waffle recipe, but you can use your favorite plant-based milk. I also really like oat milk and soy milk, however, you can use water as well. I like to use a nut milk because it’s a great source of calcium and it makes the batter nice and creamy.

Directions:

  1. Blend all of your ingredients together in a blender or NutriBullet to form a thick and creamy consistency
  2. Lightly grease your mini waffle maker with olive oil
  3. Pour your waffle batter in your mini waffle maker
  4. Gently fold in additional strawberry pieces (optional)
  5. Cook each waffle for 4 minutes (recipe yields two mini waffles)
  6. Add your favorite toppings and enjoy!

  • Cook each waffle for 4 minutes
  • Add toppings and enjoy!
