Hello everyone and welcome back to my blog! I’ve been making a lot of new breakfast recipes lately, and I’m super excited to share this healthy vegan cinnamon raisin baked oats recipe. If you like cinnamon and raisin, then you will absolutely love this recipe. It’s vegan, healthy, and super easy to make.

This is dessert for breakfast at its finest! It’s sweet, fluffy, and has the perfect hint of cinnamon. This is one of my go-to breakfasts to make in the morning as I’m heading to work. I don’t always have a lot of time to make time-consuming breakfasts, so I often resort to my baked oats recipes because they can be made in around 20 minutes.

1. NutriBullet Pro Blender: This is the blender that I use to make my oat flour, as well as my batter for my recipes. It’s such a great kitchen appliance and is something that I use daily. It’s also really affordable.

2. Orgain Organic Plant-Based Protein Powder Creamy Chocolate Fudge: This is one of my favorite vegan protein powders. It doesn’t taste chalky at all, and it’s super tasty! This is the brand of protein powder that I use in all of my recipes.

3. Dash Mini Pancake Maker: This Dash mini griddle is only around $10-20, and it works wonders. I use this for my pancake recipes, and it makes making pancakes so easy!


Ingredients

  • Rolled Oats: The first ingredient you need to make these cinnamon raisin baked oats is rolled oats. You can make oat flour by blending rolled oats (or quick oats) in a blender or NutriBullet. Blend until there is a flour-like consistency. I love using oat flour in my recipes because it’s really inexpensive. You can buy a large container of rolled oats for just a few dollars at the grocery store.
  • Cinnamon: The next ingredient you need is cinnamon. I’ve been adding cinnamon to a lot of my breakfast/dessert recipes. Cinnamon adds the perfect flavor to this breakfast recipe, and you seriously can’t add too much cinnamon to your oats.
  • Baking Powder: You also need 1/4 tsp of baking powder. Baking powder helps the baked oats rise.
  • Banana: Next, you need 1/4 of a banana. I tend to use banana in my baked oats recipes because it adds sweetness and gives the baked oats the perfect creamy texture.
  • Nut Milk: The next ingredient you need is a nut milk of your choice. I used unsweetened vanilla almond milk, but you could also use soy milk, silk milk, or oat milk. Using a nut milk in your baked oats makes them creamier, which is why I almost always use nut milk instead of water. However, water will work just as well, so feel free to use water instead of a nut milk.
  • Raisins: You also need 1 tbsp of raisins. Raisins are super sweet and taste really delicious when you bake them in the oven. I bought a six-pack of raisins from Aldi for super cheap, and it’s the perfect topping for this oatmeal recipe. I mixed some raisins into the batter, and I also sprinkled a few on top after the baked oats cooked in the oven.
  • Pure Maple Syrup: The last ingredient you need is 1-2 tsp of pure maple syrup. Maple syrup is my favorite sweetener to use for my breakfast/dessert recipes because it’s super sweet and is a natural sweetener. I used 1 tsp of pure maple syrup for the batter and added additional maple syrup on top.

Ingredients
  

  • 1/2 cup rolled or quick oats
  • 1/4 tsp cinnamon
  • 1 tbsp raisins
  • 1/3 cup + 1 tbsp nut milk (I used unsweetened vanilla almond milk)
  • 1 tsp pure maple syrup (plus more for the topping)
  • 1/4 banana
  • 1/4 tsp baking powder

Instructions
 

  • Preheat the oven to 350°
  • Blend the rolled or quick oats, cinnamon, nut milk, pure maple syrup, baking power & banana in a blender or NutriBullet to form a thick and creamy consistency
  • Pour your oat batter into an oven safe baking dish
  • Gently fold in the raisins
  • Bake in the oven for 20 minutes at 350°
  • Add toppings and enjoy!

This is such an easy recipe that you can easily make. It only takes a few minutes to prep the oat batter, then all you have to do is bake it in the oven for 20 minutes. It’s one of my favorite easy breakfasts to make, and it’s both filling and nutritious. It’s also a great fall treat to make.
