Sweet and fluffy vegan cinnamon raisin baked oats.

Ingredients
  

  • 1/2 cup rolled or quick oats
  • 1/4 tsp cinnamon
  • 1 tbsp raisins
  • 1/3 cup + 1 tbsp nut milk (I used unsweetened vanilla almond milk)
  • 1 tsp pure maple syrup (plus more for the topping)
  • 1/4 banana
  • 1/4 tsp baking powder

Instructions
 

  • Preheat the oven to 350°
  • Blend the rolled or quick oats, cinnamon, nut milk, pure maple syrup, baking power & banana in a blender or NutriBullet to form a thick and creamy consistency
  • Pour your oat batter into an oven safe baking dish
  • Gently fold in the raisins
  • Bake in the oven for 20 minutes at 350°
  • Add toppings and enjoy!
