Healthy Vegan Chocolate Chip Banana Muffins

Here’s how you can make fudgy vegan chocolate banana muffins. This recipe calls for 10 ingredients and takes 15 minutes to bake in the oven. The prep time is short, so this is the perfect recipe to make if you want to make an easy treat.


Ingredients

  • Oat Flour: The first ingredient is oat flour. You can make oat flour by blending rolled oats in a blender or NutriBullet. Blend the rolled oats until they form a flour-like consistency.
  • Whole Wheat Flour: The next ingredient is whole wheat flour. I like to mix oat flour and whole wheat flour together when making some of my recipes because whole wheat flour is a bit denser than oat flour. This recipe calls for 1/4 cup of whole wheat flour.
  • Vanilla Extract: Next, you need a splash of vanilla extract (1/2 tsp).
  • Baking Powder: The next ingredient is baking powder. For this recipe, you need 1/2 tsp of baking powder. Baking powder helps make the muffins rise.
  • Cocoa Powder: Next, you need cocoa powder. Cocoa powder adds a chocolate flavor to these banana muffins. I used Hershey’s Unsweetened Cocoa Powder for this recipe.
  • Banana: The next ingredient is banana. Mash the banana in a small mixing bowl until it’s throughly mashed. Banana adds sweetness to the muffins and makes them moist.
  • Creamy Peanut Butter: Creamy peanut butter is the next ingredient you need. Krema and Smucker’s Natural Peanut Butter are some of my favorite natural peanut butters to use.
  • Maple Syrup: For a sweetener, you need 2 tablespoons of pure maple syrup. I like using maple syrup in my dessert recipes because it’s a great natural sweetener and it’s super sweet.
  • Almond Milk: The next ingredient is almond milk, or a plant-based milk of your choice. My go-to plant-based milk is unsweetened vanilla almond milk, but I also like soy milk, silk milk, and oat milk.
  • Chocolate Chips: The last ingredient you need to make these delicious chocolate banana muffins are vegan chocolate chips. I like Lily’s chocolate chips and Enjoy Life’s vegan baking chips, but you can use any vegan chocolate chips you want.

Ingredients
  

  • 1/2 cup oat flour
  • 1/4 cup whole wheat flour
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking powder
  • 3 tbsp cocoa powder
  • 1 banana
  • 3 tbsp creamy peanut butter
  • 2 tbsp pure maple syrup
  • 1/4 cup + 2 tbsp almond milk
  • 1 tbsp vegan chocolate chips (optional)

Instructions
 

  • Preheat oven to 350° 
  • Add dry ingredients to a large mixing bowl: oat flour, whole wheat flour, baking powder and cocoa powder
  • Whisk together wet ingredients in a separate mixing bowl: vanilla extract, banana, creamy peanut butter, maple syrup and almond milk
  • Combine wet ingredients to dry ingredinets
  • Fold in vegan chocolate chips
  • Lightly grease a muffin pan with olive oil spray
  • Pour batter to fill 5 muffins on the muffin pan
  • Bake at 350° for 15 minutes
  • Let cool and enjoy!
