Easy Vegan Vegetable & Potato Stew Recipe

Vegan Vegetable & Potato Stew
This vegan vegetable and potato stew recipe is the perfect easy lunch or dinner to make, and it’s a great meal to meal prep for the week. I made this soup over the weekend and have been eating it for dinner this week, and it’s so nice not having to cook when I get home from work. This soup is made with carrots, potatoes, broccoli, corn, garlic, onion, and an assortment of spices.
How Long Does This Recipe Take To Make?
In total, this recipe takes about two hours to make. Allow around 25 minutes to prep all of the ingredients. The stew itself takes about 1 hr 20 minutes to cook, and about 15 minutes for it to cool.
How Many Servings Does This Recipe Make?
This recipe makes about 9 servings, or 9 cups of soup. This recipe makes enough soup for nine people.
Ingredients
- Vegetable Broth: You need 5 cups of vegetable broth for this recipe. I used a salted organic vegetable broth, and I highly recommend using a vegetable broth that has salt in it. Otherwise, you may want to add additional salt.
- Potatoes: You also need 3 1/2 cups of chopped potatoes.
- Carrots: Next, you need 1 cup of carrots. I cut up fresh carrots, but you could use frozen carrots as well.
- Frozen Corn: You also need 1 cup of frozen corn. Fresh or canned corn will work as well, but I only had frozen corn.
- Frozen Broccoli: I also added about 3 cups of frozen broccoli.
- Garlic Clove: Next, you need 1 garlic clove. Feel free to use more garlic if you want the soup to have a stronger garlic flavor.
- Onion: You also need 1/2 cup of onion for this stew recipe.
- Nutritional Yeast: For this recipe, you need 2 tbsp of nutritional yeast. I love adding nutritional yeast to soup recipes because it’s high in vitamin B12 and adds a nice flavor.
- Garlic Powder: You also need garlic powder for this recipe. Garlic powder is one of my favorite spices to add to soup recipes because it has a great flavor and adds the perfect hint of garlic to the soup.
- Onion Powder: In addition to garlic powder, you need onion powder. Like the garlic powder, I love adding onion powder to soup recipes. It adds a nice flavor and pairs well with garlic.
- Cumin: I added cumin as well, which is another spice I tend to throw in my savory recipes.
- Turmeric: Turmeric is another spice I typically add to my savory dishes. It has a strong flavor, so I only added 1/2 tsp of turmeric.
- Salt: Next, you need salt. Add as much or as little salt as you want. I just added a dash of salt because I like my soups and stews less salty. However, if you want the stew to have a saltier taste, add more than a dash of salt.
- Pepper: Like the salt, you can add your desired amount of pepper. I added pepper to my individual stew after it had cooked, but you can add it in with the other spices as well.
Recommended Toppings
- Creamy Hummus: One of my favorite toppings to add to soups and stews is creamy hummus. Hummus is incredibly delicious and pairs especially well with this vegetable and potato stew.
- Nutritional Yeast: I love nutritional yeast, and so I always like to add more nutritional yeast on my stew. It’s incredibly tasty and nutritious too!
- Salt & Pepper: I added just a dash of salt and pepper in the stew.
Vegan Vegetable & Potato Stew
Ingredients
- 5 cups vegetable broth (I used salted organic vegetable broth)
- 3 1/2 cups potatoes
- 1 cup carrots
- 1 cup frozen corn
- 3 cups frozen broccoli
- 1 garlic clove
- 1/2 cup onion
- 2 tbsp nutritional yeast
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp cumin
- 1/2 tsp turmeric
- salt (salt to taste)
- pepper (salt to taste)
Instructions
- Add all of the ingredients to a large pot: vegetable broth, carrots, frozen corn, frozen broccoli, garlic, onion, nutritional yeast, garlic powder, onion powder, cumin, turmeric, salt & pepper
- Let stew simmer for 1 hr 20 minutes (stir occassionally)
- Let cool and enjoy!
Notes
This vegan vegetable and potato soup recipe is incredibly easy to make and it’s the perfect healthy lunch/dinner recipe to have throughout the week. The soup is delicious topped with hummus and nutritional yeast, but feel free to add other toppings as well.
