Vegan Vegetable & Potato Stew

Delicious seasoned potato and vegetable stew.

Ingredients
  

  • 5 cups vegetable broth (I used salted organic vegetable broth)
  • 3 1/2 cups potatoes
  • 1 cup carrots
  • 1 cup frozen corn
  • 3 cups frozen broccoli
  • 1 garlic clove
  • 1/2 cup onion
  • 2 tbsp nutritional yeast
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cumin
  • 1/2 tsp turmeric
  • salt (salt to taste)
  • pepper (salt to taste)

Instructions
 

  • Add all of the ingredients to a large pot: vegetable broth, carrots, frozen corn, frozen broccoli, garlic, onion, nutritional yeast, garlic powder, onion powder, cumin, turmeric, salt & pepper
  • Let stew simmer for 1 hr 20 minutes (stir occassionally)
  • Let cool and enjoy!
