Creamy Vegan Pumpkin Chocolate Stovetop Oats

Creamy Vegan Pumpkin Chocolate Stovetop Oats

I’m back to share another oatmeal recipe, but this one’s a little different. I typically share baked oats recipes or easy microwaveable oatmeal recipes, but today I’m sharing a recipe for stovetop oats. I’ve actually only made stovetop oats a few times before, but I will most definitely be making them again soon.

In honor of fall, I decided to make pumpkin chocolate flavored stovetop oats. I had to combine my two favorite things together in a recipe, and this is like eating dessert for breakfast. This recipe is also quick to make. It only takes about 13 minutes (give or take a few) to cook on low-medium heat, so it’s an easy recipe that you can make in the morning before heading off to work.

This oatmeal recipe is rich, creamy, and is a new favorite of mine. It’s made with canned pumpkin, pumpkin pie spice, oats, unsweetened applesauce, maple syrup, water, and vegan dark chocolate chips. Now let’s take a further look into the ingredients you need to make this delicious one-pot oatmeal recipe.


Ingredients

  • Rolled or Quick Oats: The first ingredient you need is rolled or quick oats. Quick oats are essentially the same as rolled oats except they’re a bit smaller in size and they cook faster. I prefer quick oats over rolled oats, but you can certainly use rolled oats for this recipe as well.
  • Unsweetened Cocoa Powder: Next, to add a chocolate flavor, you need unsweetened cocoa powder. Cocoa powder is an affordable ingredient and is my go-to whenever I’m making a chocolate recipe.
  • Pumpkin Pie Spice: You also need pumpkin pie spice. I always find myself grabbing this spice from my pantry every time I make a pumpkin recipe. You can’t make pumpkin-flavored recipes without the pumpkin pie spice–it’s an essential ingredient.
  • Canned Pumpkin: Next, you need canned pumpkin. Although pumpkin isn’t very sweet on its own, it adds a nice pumpkin flavor and makes the oats creamier. I absolutely love canned pumpkin, and it’s an essential ingredient for this recipe.
  • Unsweetened Applesauce: To sweeten the oats, I added 3 tbsp of unsweetened applesauce. You can’t taste the applesauce, but it does help add sweetness to this recipe.
  • Maple Syrup: To add additional sweetness, I added 2 tsp of maple syrup to my oats. If you want your oats even sweeter and more of a dessert rather than a breakfast, feel free to add more maple syrup than this. You can use a different sweeten as well, so sweeten to taste.
  • Water: I typically add nut milk to my oatmeal recipes, but today I decided to switch things up and use water. I used 1 cup of water and stirred the oats every few minutes until it formed a thick and creamy consistency.
  • Vegan Dark Chocolate Chips: Last but certainly not least are the dark chocolate chips. I sprinkled a few chocolate chips on top of my oats after they had finished cooking on the stove, but feel free to add in some chocolate chips while the oats are cooking. Like the maple syrup, feel free to add more chocolate chips if you’re wanting a sweeter breakfast.

Ingredients
  

  • 1/2 cup rolled or quick oats
  • 1/2 tbsp unsweetened cocoa powder
  • 1/2 tsp pumpkin pie spice
  • 1/4 cup canned pumpkin
  • 3 tbsp unsweetened applesauce
  • 2 tsp maple syrup (add more to make it sweeter)
  • 1 cup water
  • 1/2 tbsp vegan dark chocolate chips (for topping)

Instructions
 

  • Add your rolled or quick oats, unsweetened cocoa powder, pumpkin pie spice, canned pumpkin, unsweetened applesauce, maple syrup, and water to a pot
  • Cook on low-medium heat for 13 minutes or until the oats are fully cooked
  • Pour your oats into a bowl
  • Add your chocolate chips and enjoy!
