6-Ingredient Apple Cinnamon Pancakes
How to make sweet and fluffy vegan apple-cinnamon pancakes.

Hello everyone and welcome back to my blog! I am super excited to share with you all this breakfast recipe for apple cinnamon pancakes. These pancakes are sweet, fluffy, and have no added sugar! The apples and applesauce used in this recipe make the pancakes super sweet, but feel free to top these pancakes off with maple syrup to sweeten them even more.
Pancakes are one of my favorite breakfasts/desserts to make, and it’s the absolute perfect recipe for anyone who loves apples and apple-flavored recipes. This recipe calls for six ingredients, and so this is the perfect recipe for beginners. For this recipe, you will need: rolled oats, cinnamon, baking powder, unsweetened applesauce, almond milk (I used unsweetened vanilla), and dice apples.
Pancakes were one of my favorite breakfast foods growing up. I would make them on the weekends and load them up with maple syrup and fruit. However, now that I eat a bit healthier, I wanted to share a healthier alternative to traditional pancakes. These apple cinnamon pancakes are not only super sweet and tasty, but they have no added sugar and they taste absolutely incredible.
This recipe can be made in five minutes, and I used my Dash mini pancake cooker to make these pancakes. This recipe makes around 5 mini pancakes, and each pancake takes around 30 seconds-1 minute to bake using my Dash mini pancake maker. You can also use a normal pan if you don’t have a mini pancake maker!
Ingredients you’ll need:
1. Rolled Oats
The first ingredient you’ll need to make this recipe is rolled oats. Rolled oats are super inexpensive to buy at the grocery store–you can buy a large container of rolled oats for less than $3, which is a steal if I do say so myself. To make oat flour, all you need to do is blend rolled oats (or instant oats) in a blender or NutriBullet to form a flour-like consistency.
I used rolled oats instead of whole wheat flour (or pastry flour), however, you could use a blend of the two if you prefer. I’ve made different pancake recipes in the past using a blend of oat flour and whole wheat flour and they turned out just as tasty!
2. Cinnamon
The next ingredient you’ll need is cinnamon, which adds the perfect flavor to these pancakes. Cinnamon is one of my go-to spices for all of my breakfast and dessert recipes, and I highly recommend adding cinnamon to your pancakes. It adds the best flavor and makes them even tastier.
3. Baking Powder
Next, you’ll need 1/2 tsp of baking powder. This helps make the pancakes a bit fluffier.
4. Unsweetened Applesauce
You’ll then need unsweetened applesauce. This helps make the pancakes sweeter and adds the perfect apple-flavor to them. I typically use banana in my pancake recipes, but since I didn’t want the banana to mask the apple flavor, I chose to use unsweetened applesauce instead. You could also use a sweetened version of applesauce if you prefer.
5. Almond Milk (I used unsweetened vanilla)
The next ingredient you’ll need is almond milk. I used unsweetened vanilla almond milk, but you can use any nut milk of your choice. Using a nut milk instead of water makes the pancakes a bit creamier and more flavorful. My favorite nut milk to use is almond milk, but you could also use oat milk, soy milk, or silk milk.
6. Diced Apple Pieces
The last ingredient you’ll need to make these apple cinnamon pancakes is diced apples. I used 1/4 cup of diced apples, and I highly recommend chopping the apple pieces into really small pieces. This adds the perfect sweetness to the pancakes and gives them a strong apple flavor.

Fluffy Apple Cinnamon Pancakes
Ingredients
- 1/2 cup rolled oats
- 1/4 tsp cinnamon
- 1/4 tsp baking powder
- 2 tbsp unsweetened applesauce
- 1/3 cup nut milk (I used unsweetened vanilla almond milk)
- 1/4 banana
- 1/4 cup diced apples
Toppings
- 1 tsp pure maple syrup
- 1 tsp walnuts
- diced apples
- 1 tsp creamy peanut butter
Instructions
- Blend oats, cinnamon, baking powder, unsweetened applesauce, nut milk and banana in a blender or NutriBullet to form a thick pancake batter consistency
- Gently fold in 1/4 cup of diced apples
- Heat each pancake for 2 minutes on a mini pancake griddle (recipe yields 5 mini pancakes)
- Add toppings and enjoy!
