- 1/2 cup rolled oats
- 1/4 tsp cinnamon
- 1/4 tsp baking powder
- 2 tbsp unsweetened applesauce
- 1/3 cup nut milk (I used unsweetened vanilla almond milk)
- 1/4 banana
- 1/4 cup diced apples
Toppings
- 1 tsp pure maple syrup
- 1 tsp walnuts
- diced apples
- 1 tsp creamy peanut butter
Blend oats, cinnamon, baking powder, unsweetened applesauce, nut milk and banana in a blender or NutriBullet to form a thick pancake batter consistency
Gently fold in 1/4 cup of diced apples
Heat each pancake for 2 minutes on a mini pancake griddle (recipe yields 5 mini pancakes)
Add toppings and enjoy!
