Ingredients
  

  • 1/2 cup rolled oats
  • 1/4 tsp cinnamon
  • 1/4 tsp baking powder
  • 2 tbsp unsweetened applesauce
  • 1/3 cup nut milk (I used unsweetened vanilla almond milk)
  • 1/4 banana
  • 1/4 cup diced apples

Toppings

  • 1 tsp pure maple syrup
  • 1 tsp walnuts
  • diced apples
  • 1 tsp creamy peanut butter

Instructions
 

  • Blend oats, cinnamon, baking powder, unsweetened applesauce, nut milk and banana in a blender or NutriBullet to form a thick pancake batter consistency
  • Gently fold in 1/4 cup of diced apples
  • Heat each pancake for 2 minutes on a mini pancake griddle (recipe yields 5 mini pancakes)
  • Add toppings and enjoy!
