Vegan Banana Nut Muffins

Here’s a recipe for vegan banana nut muffins.

Maple and banana go great together, so I decided to make a batch of maple banana nut muffins. I’m a huge fan of banana nut muffins, and these did not disappoint. If you like banana, you will absolutely love these muffins. They have so much flavor, and this recipe calls for less than 10 ingredients.


Ingredients

  • Pitted Dates: The first ingredient you need for this recipe are pitted dates. I used medjool pitted dates for this recipe. Dates are known as nature’s candy and are super sweet.
  • Oat Flour: The next ingredient is oat flour. You can make oat flour by blending up rolled oats in a NutriBullet or blender.
  • Whole Wheat Flour: In addition to oat flour, you need whole wheat flour for this recipe. This recipe calls for 1 cup of oat flour and 1 cup of whole wheat flour.
  • Baking Powder: Baking powder is the next ingredient you need for this recipe. Baking powder makes the muffins rise.
  • Bananas: The next ingredient you need are bananas. Bananas make the muffins super sweet. Try and find your ripest bananas to use. The bananas that have been sitting on your kitchen counter for a while are perfect for this recipe. Ripe bananas are always the sweetest!
  • Applesauce: The next ingredient is applesauce. I used unsweetened applesauce for this recipe. Applesauce makes the muffins moist and gooey.
  • Almond Milk: Almond milk is the next ingredient you need for this recipe. I prefer almond milk, but cashew milk and oat milk are great alternatives as well.
  • Maple Syrup: Next, you need maple syrup. I added 2 tbsp of maple syrup to make the muffins sweeter. I also drizzled maple syrup on top of the muffins.
  • Walnuts: The last ingredient you need is chopped walnuts. I like adding nuts to my recipes because they add a nice crunch.

Ingredients
  

  • 4 pitted dates
  • 1 cup oat flour
  • 1 cup whole wheat flour
  • 1/2 tsp baking powder
  • 2 bananas
  • 1/4 cup unsweetened applesauce
  • 1/2 cup almond milk
  • 2 tbsp maple syrup
  • 1/4 cup chopped walnuts

Instructions
 

  • Preheat oven to 350°
  • Soak dates in hot water for 10 minutes
  • Add dry ingredients together in a mixing bowl: oat flour, whole wheat flour, and baking powder
  • Blend dates and bananas in a NutriBullet
  • Add wet ingredients in a separate bowl: date and banana mixture, almond milk, applesauce, and maple syrup
  • Slowly fold in the chopped walnuts
  • Spray muffin pan with oil
  • Add mixture to muffin tin (makes 11 muffins)
  • Drizzle maple syrup and chopped walnuts on top of muffins to caramelize
  • Bake at 350° for 20 minutes
  • Let cool and enjoy!
