No Bake Vegan Peanut Butter Chocolate Date Bars

Brownies are easily one of my favorite desserts, especially brownies with a delicious frosting on top. If you love peanut butter and chocolate, then you will absolutely love this recipe. I have a similar recipe on my blog already, but this recipe includes a delectable peanut butter frosting. These date bars are gooey, fudgy, and incredibly sweet.


Ingredients

  • Medjool Dates: The first ingredient you need for these no-bake peanut butter chocolate date bars are dates. For this brownie recipe, I used dates to sweeten them. Dates are known as nature’s candy, and if you’ve ever tried a date, then you know how sweet they are. This recipe calls for 14 pitted dates.
  • Cocoa Powder: The next ingredient you need for this recipe is cocoa powder. I used Hershey’s Unsweetened Cocoa Powder. Cocoa powder makes the date bars extra chocolatey. This recipe calls for 1/3 cup of cocoa powder.
  • Chia Seeds: The next ingredient you need is chia seeds. Chia seeds are nutritious and I love adding them to my recipes.
  • Peanut Butter: The next ingredient you need for this recipe is peanut butter. I used creamy peanut butter, but feel free to use crunchy peanut butter instead. You need 3 tbsp of peanut butter for the frosting.
  • Chocolate Chips: The last ingredient you need for this recipe is vegan chocolate chips to make the peanut butter chocolate frosting. Some of my favorite vegan chocolate chips are Lilly’s mini chocolate chips and Enjoy Life mini chocolate chips. This recipe calls for 2 tbsp of vegan chocolate chips.

Ingredients
  

Brownie Bar Base

  • 14 pitted dates
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp chia seeds

Peanut Butter Frosting

  • 3 tbsp peanut butter
  • 2 pitted dates
  • 2 tbsp vegan chocolate chips

Instructions
 

Brownie Bar Base

  • Soak dates in hot water for 10 minutes 
  • Blend dates, cocoa powder, and chia seeds in a food processor 
  • Lay date bar batter on piece of parchment paper 

Peanut Butter Frosting

  • Soak dates in hot water for 10 minutes
  • Blend peanut butter and dates in a food processor 
  • Spread a thin layer of peanut butter frosting over brownie bar batter
  • Melt chocolate chips in microwave for 45 seconds
  • Slowly pour layer of chocolate over peanut butter frosting 
  • Place in freezer for 20 minutes 
  • Enjoy!
