Pumpkin Oatmeal Breakfast Bars Made With Chocolate Chips

Hello everyone and welcome back to my blog! We’re in the middle of September which means pumpkin everything! I’ve been making so many pumpkin recipes lately because they’re delicious and a lot of fun to make! I’ve made pumpkin baked oats, fudgy pumpkin bars, and pumpkin spice donuts, just to name a few.

Today’s recipe is for pumpkin oatmeal breakfast bars. I made these for breakfast the other day and they turned out incredible. They’re sweet, made with pumpkin, and are the perfect cozy fall breakfast. This recipe makes two servings and can be made in less than 15 minutes.


Ingredients

  • Rolled Oats: The first ingredient you need for this recipe is rolled oats. I almost always have oats for breakfast in some form–whether it’s in baked oats, breakfast muffins, or so on. This recipe calls for 1 cup of rolled oats.
  • Cinnamon: The next ingredient you need is cinnamon. Cinnamon is my go-to spice to use in the fall, and for this recipe, you need 1/4 tsp of cinnamon.
  • Pumpkin Pie Spice: The next ingredient you need is pumpkin pie spice. I used 1/2 tsp of pumpkin pie spice to give these pumpkin oat bars a strong pumpkin flavor.
  • Canned Pumpkin: The next ingredient you need is canned pumpkin. You can buy canned pumpkin for pretty cheap, and it’s a great ingredient to use when baking. This recipe calls for 1/3 cup of canned pumpkin.
  • Banana: The next ingredient you need is banana. Because pumpkin isn’t very sweet on its own, I used 1/4 cup of mashed banana.
  • Maple Syrup: The next ingredient you need is maple syrup. This recipe calls for 1 tsp of pure maple syrup. You can add more maple syrup if you want the bars to be sweeter, but since these are breakfast bars, I didn’t want to make them super sweet.
  • Chocolate Chips: The last ingredient you need is chocolate chips. This recipe calls for 1 tsp of mini (vegan) chocolate chips. I sprinkled a few chocolate chips on top before popping these oat bars in the oven, but you could also add nuts as well. I also topped my pumpkin oat bars with creamy peanut butter and it was the perfect sweet and filling breakfast.

Ingredients
  

  • 1 cup rolled oats
  • 1/4 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1/3 cup canned pumpkin
  • 1/4 cup mashed banana
  • 1 tsp pure maple syrup
  • 1 tsp mini chocolate chips (vegan)

Instructions
 

  • Preheat oven to 350°
  • Combine dry ingredients in one bowl: rolled oats, cinnamon and pumpkin pie spice
  • Add wet ingredients: canned pumpkin, mashed banana and pure maple syrup
  • Add pumpkin oat batter to a baking pan
  • Sprinkle mini chocolate chips on top
  • Bake in oven at 350° for 10 minutes
  • Let cool and enjoy!
