Hello everyone and welcome back to my blog! I’m super excited to share this recipe with you all–pumpkin maple walnut granola. I know I’ve been making a lot of pumpkin recipes lately, but I seriously can’t help myself. Pumpkin recipes are some of my favorite to make. I absolutely love the fall season and making warm and cozy recipes are the best.
As I’m writing this post, we’ve officially hit October. It’s spooky season and time to bring out the Halloween movies and decor. This pumpkin maple walnut granola is perfect for parties, gatherings, or as a fun treat to make for your fiends and family.
Granola is such an easy recipe to make, and it’s tasty too. I have several other granola recipes on my blog, so feel free to check those out as well. But if you love pumpkin spice, then you have to make this pumpkin granola recipe. It’s healthy, low in sugar, and calls for 5 ingredients.
You can eat granola as cereal (I added almond milk to it and it was the perfect breakfast), on yogurt (vegan), and as a topping for smoothies. It’s a great recipe to meal prep for breakfast.
Ingredients you’ll need:
1. Rolled Oats
The first ingredient you’ll need to make this pumpkin spice granola is rolled oats. Rolled oats are used in pretty much every sweet recipe of mine, and it should be no surprise at this point. Rolled oats are cheap, tasty, and one of my favorite ingredients to bake with. The main ingredient in granola is oats, and for this recipe, you’ll need 1 1/2 cups of oats. Feel free to double the recipe if you want to make a larger batch of granola!
2. Pumpkin Pie Spice
The next ingredient you’ll need is pumpkin pie spice. One of my favorite things about fall is the pumpkin pie spice! It’s not sold in stores year round (at least not where I live), so when the fall season hits, I always run to my local store to pick up this spice. It adds the perfect pumpkin flavor to granola, and it bakes well in the oven.
3. Pure Maple Syrup
You’ll also need 1 tbsp of pure maple syrup. I don’t like my granola overly sweet, but if you want your granola to be a bit sweeter, you can always add a bit more maple syrup. I like using maple syrup as a sweetener because it’s natural and super sweet!
4. Walnut Pieces
Next, you’ll need 2 tbsp of crushed walnuts. You could also use pecans, but I love walnuts in granola. Walnuts also taste great baked in the oven. I crushed up 2 tbsp of walnuts and evenly distributed them in the granola.
5. Canned Pumpkin
Canned pumpkin is everywhere now. It’s also super cheap, which I absolutely love. It’s great for baking and I’ve been using pumpkin in so many of my recipes lately. Even if you don’t want to make pumpkin-flavored desserts, it’s a great base for any recipe. I’ve made brownies with pumpkin, and it’s seriously a great ingredient to have on hand for baking.
For this granola, I used 1/4 cup of canned pumpkin and it added the perfect hint of pumpkin. You don’t want your granola to be wet, just coated enough so that it’s still crunchy and bakes well in the oven.
Optional: Mini Chocolate Chips (Vegan)
You can also sprinkle some mini vegan chocolate chips on the granola after it bakes in the oven. I didn’t include chocolate chips in the recipe card, but I’ve added chocolate chips to my granola recipes before and it’s a great ingredient to add to make it even sweeter!
