Dairy-Free No-Bake Cookies

Here’s how you can make vegan no-bake cookies.

One of my favorite things to do on the weekends is to bake and create new vegan recipes. I always have some extra time on the weekends, and this past weekend I made these delicious vegan no-bake cookies.


Ingredients

1. Rolled Oats

The first ingredient you need for this recipe is rolled oats. Fold the rolled oats into the cookie mixture to make these delicious no-bake cookies.


2. Peanut Butter

The next ingredient you need is peanut butter. I used a creamy natural peanut butter for this recipe. Some of my favorite peanut butters are Krema and Smucker’s Creamy Natural Peanut Butter. I recommend using a creamy peanut butter as opposed to a crunchy peanut butter if you don’t want any peanut chunks in the cookies.


3. Cocoa Powder

The next ingredient is cocoa powder. I used Hershey’s Unsweetened Cocoa Powder to make these cookies.


4. Vanilla Extract

The next ingredient you need is vanilla extract.


5. Maple Syrup

Next, you need maple syrup. You need 2 tbsp of maple syrup for the entire batch of cookies. Maple syrup is super sweet, so a little goes a long way.


6. Applesauce

The next ingredient you need is applesauce. Applesauce helps make these no-bake cookies soft and gooey. I prefer soft cookies over hard and crunchy cookies, so if you like cookies that melt in your mouth, you will absolutely love this cookie recipe.


7. Chocolate Chips

Next, you need chocolate chips. Some of my favorite chocolate chips to use in dessert recipes are Lilly’s mini baking chips and Enjoy Life’s mini chocolate chips.


8. Almond Milk

The last ingredient you need is almond milk, or another plant-based milk. Cashew milk, soy milk, and oat milk are good alternatives.


Vegan Peanut Butter Chocolate No-Bake Cookies

Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup peanut butter
  • 1 tbsp cocoa powder
  • 1/2 tsp vanilla extract
  • 2 tbsp maple syrup
  • 1/4 cup applesauce
  • 2 tbsp vegan chocolate chips
  • 1/2 cup almond milk

Instructions
 

  • Heat pot on the stove at low heat
  • Add in peanut butter, vanilla extract, maple syrup, applesauce, and milk on stove until thoroughly mixed and heated
  • Add in rolled oats
  • Line baking sheet with parchment paper
  • Use a 1 tablespoon measurer to form no-bake cookies (yields about 18)
  • Put in freezer for 20 minutes
  • Enjoy!

*Something to note is that you want to make sure the stove is at very low heat. You don’t want the mixture to burn, so keep an eye out and watch closely so the cookies don’t burn. They only have to cook for about five minutes, so if you lose track of time they might come out burnt.*

This is an easy recipe that takes no time at all to make. It’s a perfect dessert to make for birthday parties, holiday parties, and gatherings with your friends and family. These are incredibly gooey and flavorful–you seriously can’t go wrong with a batch of no-bake cookies.
