High Protein Vegan Black Bean Soup

This high protein vegan black bean soup is the perfect warm and cozy meal to make during the fall and winter months. This soup is filled with veggies and made with an assortment of spices, and it’s incredibly delicious.

I’ve been wanting to make a high protein vegan soup for a while now, and I finally had the time to make it the other day. This recipe is a bit more time-consuming, as it takes a bit longer to prep all of the ingredients and to cook, however, it’s truly worth the wait.

This soup is incredibly healthy and packed with flavor. It’s truly amazing what adding a few spices to your meals can do. If you’re looking for a good soup recipe, then look no further. This high protein vegan lentil soup is one of my favorite recipes I have ever made.

It’s made with black beans, vegetable broth, carrots, onion, garlic, nutritional yeast, corn, as well as spices including turmeric, cumin, garlic powder, onion powder, salt, and pepper.


Ingredients

  • Carrots: Carrots are an essential ingredient for making soup. They soften up and are incredibly flavorful cooked with the spices and other ingredients. Carrots are also one of my favorite vegetables, and they have numerous health benefits.
  • Frozen Corn: In addition to carrots, corn is an essential vegetable to add to your soup recipes. I used frozen corn, and it added so much flavor to this soup recipe. I love corn as well, and if you haven’t added corn to your soup before, you’ve truly been missing out.
  • Black Beans: You also need black beans. This is black bean soup, so the key ingredient is the black beans. I used a whole can of black beans for this recipe, and you want to cook the soup long enough so that the black beans soften up and create the perfect soup consistency.
  • Vegetable Broth: The liquid you need for this soup recipe is vegetable broth. I added 1 cup of vegetable broth to the soup recipe, and it added great flavor to this dish. I love using vegetable broth for my soup recipes because it’s packed with flavor.
  • Cumin: For the spices, you need cumin. This is a spice I always throw in my dishes because it’s nutritious and adds a nice flavor.
  • Garlic Powder: Garlic powder is another spice that I love adding to my dishes.
  • Onion Powder: Like garlic powder, I like adding some onion powder in my soup recipes. It’s flavorful and goes well with the other spices.
  • Turmeric: Turmeric is a bit spicy, which is why I like adding it to my recipes. It adds a unique flavor and is one of my favorite spices to use.
  • Salt & Pepper: Lastly, you want to add in some salt and pepper. Add as much or as little salt and pepper as you’d like.
  • Garlic Clove: I also added one garlic clove to this recipe. I love garlic and it has numerous health benefits, so I try to add it to my dishes whenever I can.
  • Nutritional Yeast: As a vegan, I try to incorporate nutritional yeast into my diet. It’s a seasoning/spice that I eat almost everyday, and it’s perfect in soup as well.
  • Onion: Lastly, you need 1/2 cup of chopped onion. I personally love onion, and cooked in soup it’s even better.

Ingredients
  

  • 1/2 cup carrots
  • 1/2 cup frozen corn
  • 1 can black beans
  • 1 cup vegetable broth
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp turmeric
  • dash salt & pepper
  • 1 garlic clove
  • 1 tbsp nutritional yeast
  • 1/2 cup onion

Instructions
 

  • Add all of the ingredients to a pot
  • Heat on low-medium heat for 45 minutes to an hour
  • Let cool and enjoy!
