Vegan Chocolate Chip Oatmeal Cookies

Here’s how you can make soft and delicious vegan chocolate chip oatmeal cookies.

Oatmeal cookies are one of my favorite desserts to make because it’s quick and easy. This cookie recipe only take 12 minutes to bake in the oven, so it’s a perfect recipe to make when you’re crunched on time. These cookies are also oil-free and dairy-free.


Ingredients

  • Rolled Oats: The first ingredient you need to make these vegan chocolate chip oatmeal cookies is rolled oats. This is a budget-friendly ingredient that is perfect for making more affordable recipes.
  • Banana: The next ingredient you need is 1 banana. I’d recommend using a banana that has a few brown spots on it, because that means it’s sweeter. Mash the banana in a bowl until there are no clumps left. Then, mix all of the ingredients in a large mixing bowl until the ingredients are well-combined.
  • Peanut Butter: The next ingredient you need is creamy peanut butter. Peanut butter helps the cookies stick, and it adds a strong peanut flavor to the cookies. Some of my favorite peanut butters are Smucker’s Creamy Natural Peanut Butter and Krema’s Creamy Peanut Butter. I also really like the salted creamy peanut butter from Trader Joe’s.
  • Almond Milk: The next ingredient is almond milk. This recipes calls for 2 tbsp almond milk. I used unsweetened vanilla almond milk for this recipe, but feel free to use a nut milk of your choice.
  • Maple Syrup: This recipe calls for 2 tbsp maple syrup. Maple syrup adds the perfect amount of sweetness.
  • Vanilla Extract: You also need a splash of vanilla extract.
  • Chocolate Chips: The last ingredient you need to make these vegan chocolate chip oatmeal cookies is 2 tbsp of vegan chocolate chips, or 3 tbsp for additional sweetness. I love adding chocolate chips to my recipes because they’re super sweet. Some of my favorite vegan chocolate chips are Enjoy Life’s mini baking chips and Lily’s vegan chocolate chips. These are dairy-free chocolate chips that you can get on Amazon or at the grocery store. Fold the chocolate chips into the cookie batter until the chocolate chips are evenly distributed. Add as many chocolate chips as you’d like!

Ingredients
  

  • 1 cup rolled oats
  • 1 banana
  • 1/3 cup peanut butter
  • 2 tbsp almond milk
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 2 tbsp vegan chocolate chips (use 3 for extra sweetness)

Instructions
 

  • Preheat oven to 350°
  • Mash banana in a bowl
  • Add vanilla extract, peanut butter, and almond milk to mashed banana
  • Slowly fold in oatmeal with wet ingredients
  • Fold in chocolate chips
  • Bake at 350° for 12 minutes
  • Let cool and enjoy!
