How to Make Vegan Pumpkin Oatmeal Cookies

I’m back today to share my latest dessert recipe: vegan pumpkin chocolate chip oatmeal cookies! Fall is finally here, and it’s my absolute favorite season. I love all the fall decorations, the cool fall weather, and all the fun fall treats.


Today’s recipe is one of those super quick recipes that requires only 10 minutes to bake in the oven. If you’re like me and want easy recipes, then this is the perfect recipe to make.


Ingredients

  • Rolled Oats: The first ingredient you need for these delicious vegan chocolate chip pumpkin oatmeal cookies is rolled oats. This recipe calls for 3/4 cup rolled oats.
  • Canned Pumpkin: The next ingredient is canned pumpkin. Canned pumpkin makes the cookies soft and gooey, which is the best kind of cookie in my opinion.
  • Cinnamon: Cinnamon is one of those spices that is seriously so good in every single dessert recipe you could possibly make. Cinnamon is strong, so a little goes a long way.
  • Pumpkin Pie Spice: The next ingredient you need is pumpkin pie spice. Like the cinnamon, pumpkin pie spice is a crucial ingredient in pumpkin recipes. This recipe calls for 1/4 tsp pumpkin pie spice.
  • Vanilla Extract: The next ingredient you need is vanilla extract. This recipe calls for 1/4 tsp vanilla extract.
  • Chocolate Chips: The last ingredient you need to make these delicious vegan pumpkin chocolate chip oatmeal cookies is chocolate chips. Some of my favorite vegan chocolate chips to use are Lilly’s and Enjoy Life’s vegan chocolate baking chips. This recipe calls for 2 tbsp chocolate chips, but feel free to add as many as you’d like!

Directions

First, mix all the wet ingredients in one bowl.

Combine the canned pumpkin, vanilla extract, and maple syrup into one bowl and mix until all ingredients are thoroughly combined.

Next, fold in the spices.

After you have combined all of the wet ingredients in one bowl, mix in the cinnamon and pumpkin pie spice.

Fold in the chocolate chips.

You can’t forget about the chocolate chips. Fold the chocolate chips into your cookie batter. Make sure the chocolate chips are evenly mixed in so there’s plenty in every cookie!

And lastly, pop them in the oven!

The final step in making these vegan pumpkin oatmeal cookies is to bake them in the oven for about 10 minutes. Allow 5-10 minutes to cool and enjoy!

Ingredients

  • 1/4 tsp cinnamon
  • 1/4 tsp pumpkin pie spice
  • 1/4 tsp vanilla extract
  • 2 tbsp chocolate chips
  • 2 tbsp maple syrup

Instructions
 

  • Preheat oven to 350° 
  • Combine all wet ingredients in one bowl: pumpkin puree, vanilla extract, and maple syrup
  • Fold in pumpkin pie spice and cinnamon
  • Fold in vegan chocolate chips
  • Line baking sheet with parchment paper
  • Make 11 small cookies
  • Bake in oven at 350° for 10 minutes
  • Let cool and enjoy!
