Healthy Vegan Strawberry Banana Pancakes

How to make sweet and fluffy vegan strawberry banana pancakes. This is the perfect breakfast to make before work, school, or on a Saturday morning when you have a little more time on your hands. You can easily make this tasty breakfast in no time with just a few simple ingredients.

Hello everyone and welcome back to my blog! I know it’s been a little while since my last post, but I’ve just been super busy. I haven’t posted any new recipes the past couple of weeks, but don’t worry because that’s about to change. The holiday season is vastly approaching and I’m so excited to share so many fun recipes these next few months.


For today’s post, I want to share this super yummy strawberry banana pancake recipe. I went on a five mile long run this past Saturday and was craving some fluffy pancakes. I absolutely love pancakes and I haven’t made a pancake recipe in a while, so I thought it was time to share a new one! It seriously is the perfect breakfast/brunch to make on the weekends when you have a little extra time.

This pancake recipe is vegan, made with six ingredients, and is the perfect healthy breakfast to make if you’re craving something sweet. I topped these pancakes with fresh strawberries, sliced banana, crunchy peanut butter, cinnamon, and pure maple syrup.


Ingredients You’ll need:

1. Rolled Oats

The first ingredient you’ll need to make these vegan strawberry banana pancakes is rolled oats. You’ll want to add your ingredients to a blender or NutriBullet and blend until there is a thick and creamy consistency. Rolled oats, banana, and nut milk makes the perfect pancake batter, which is why these three ingredients are in almost all of my pancake recipes!


2. Baking Powder & Cinnamon

Next, you’ll need 1/4 tsp of baking powder and 1/4 tsp of cinnamon. Baking powder helps make the pancakes fluffy, and cinnamon adds a nice flavor to the pancakes. I absolutely love cinnamon and it’s a spice that I almost always add to my sweet breakfast/dessert recipes.


3. Nut Milk (I used unsweetened vanilla almond milk)

I added unsweetened vanilla almond milk to my pancake batter to make it creamier, but you could use water as well. I almost always use a nut milk when baking pancake/waffle batter because it adds a nice creamy touch and makes the pancakes/waffles tastier.


4. Banana

Next, you’ll need banana. I added 1/4 of a banana into the pancake batter, and I also folded a few small banana pieces into the batter. You can also add some banana slices on top, which I also did because of how much I love banana.


5. Fresh Strawberries

You’ll also need fresh strawberries. Adding fresh fruit to your pancakes or waffles is an easy way to add nutrients to your breakfast. I absolutely love fruit, and strawberries are one of my favorite fruits to eat. I use to hate strawberries, which is kind of funny because now I absolutely love them!


6. Pure Maple Syrup & Crunchy/Creamy Peanut Butter (Optional Toppings)

The pancake is not complete unless you add the toppings. I personally love adding fresh fruit to pancakes, especially banana slices and fresh strawberries. I recently picked up a box of fresh strawberries from Aldi, and they’re perfectly in season. They’re sweet, juicy, and add a nice pop of color. As for peanut butter, I almost always add creamy or crunchy peanut butter to my pancakes. I’m a sucker for peanut butter, and it’s also a great source of protein.


Some of my favorite peanut butters are Krema, Smucker’s Creamy Natural Peanut Butter, and the creamy/crunchy salted peanut butter from Trader Joe’s. All of these peanut butters contain natural ingredients, and the only ingredients are either peanuts, or peanuts and salt.

Ingredients
  

Dry Ingredients

  • 1/2 cup rolled oats
  • 1/4 tsp baking powder
  • 1/4 tsp cinnamon

Wet Ingredients

  • 1/3 cup + 2 tbsp nut milk (I used unsweetened vanilla almond milk)
  • 1/4 banana
  • 2 tbsp chopped strawberries

Toppings

  • banana slices
  • strawberry slices
  • pure maple syrup
  • peanut butter

Instructions
 

  • Add rolled oats, baking powder, cinnamon, nut milk and banana to a blender and blend until there is a thick and creamy consistency
  • Fold in banana slices and strawberry pieces
  • Cook pancakes for 2-3 minutes each (I used my Dash mini pancake maker)
  • Add toppings and enjoy!

Strawberry banana pancakes is seriously the perfect breakfast to make on a Saturday morning. This recipe is especially great for anyone who loves fruity breakfasts. While double chocolate chip pancakes are tasty, I also really like making classic pancakes with fruit from time to time.
