3 Easy and Affordable Recipes You Can Meal Prep for Work

There can be a million things going through your head when you wake up. Make coffee, eat breakfast, get ready for work, and so on. If you’re working a traditional 8–4 or 9–5 job, then odds are you don’t have a whole lot of time in the mornings. 

When working a full-time job, it can be easy to push something like eating healthy to the side. Grabbing a frozen meal to have for lunch is more convenient and time-efficient than making a home-cooked meal yourself. 

Something that has helped me is making simple recipes that I meal prep on Sunday evenings. It takes about an hour for me to meal prep food for the entire week, but it saves me time during my busy work-week. Here are three easy recipes you can meal prep for work.

1. Pasta, Tofu & Veggies

If you know me, then you know how much I love pasta, tofu, and veggies. It’s one of my favorite meals, and better yet, it’s incredibly affordable and easy to make. 

Let’s break down the cost: 

  1. Whole Wheat Pasta ($1.99 for an entire container) 
  2. Tofu ($1.99 for an entire container) 
  3. Frozen Corn ($1.99 for a large bag) 
  4. Zucchini (~$0.76 each) 
  5. Pasta Sauce ($1.29 for an entire jar) 

I never use an entire box of pasta, frozen corn, or the whole container of pasta sauce, but for all of these ingredients combined, it would only cost you $8.02 for all of these ingredients. That’s not bad considering you’ll have leftover corn, pasta, and pasta sauce. 

This is also a super healthy meal that is really filling. I don’t snack much at work, which is why I like to make my lunches more filling so that I don’t get hungry later in the day. Tofu is a great source of protein for vegans, and veggies are not only good for you, but they taste delicious too. 


2. Sweet Potato W/Tofu & Veggies

This next meal is another one of my favorite meals to make. Sweet potatoes are one of my favorite foods, but they’re also super easy to make. All you have to do is cook it in the microwave for about 4–5 minutes depending on how large your sweet potato is, and then put it in a container. You could also heat it in the oven if you want to bake it. 

I’ll then add tofu and veggies to it, as well as some nutritional yeast. I typically add broccoli, corn, and zucchini because those are my favorite vegetables to eat. 

Let’s break down the cost: 

  1. Sweet Potato (~$0.76 each) 
  2. Tofu ($1.99 for an entire container) 
  3. Broccoli/Corn ($1.99 each) 
  4. Zucchini (~$0.76 each) 

Sweet potatoes are super inexpensive, and a tip to save money is to buy food from the produce section, or foods that aren’t already pre-made. It might be more convenient to buy frozen meals that are pre-made, but it’s often more expensive. 


3. Golden Potatoes W/Salsa & Veggies

This next dish is another one of my favorite meals to make because of how easy it is: golden potatoes with salsa and veggies. 

Golden potatoes are small potaotes that you can get from pretty much any grocery store, and they’re less than $3 for a bag. I like to top my potatoes off with salsa and have a side of veggies. 

Let’s break down the cost: 

  1. Golden Potatoes ($2.79 per bag) 
  2. Salsa ($1.99 per container) 
  3. Broccoli/Corn: ($1.99 each)

Final Thoughts

Meal prepping is one of the easiest ways to save time in the mornings. If you spend just an hour every Sunday evening, you can have your food all prepped and ready to go as your heading off to work. 

It also helps you eat healthier, because if you plan out your meals ahead of time, it’s easy to stick to a healthy diet. Some of my favorite easy recipes include pasta with tofu and veggies, sweet potato with tofu and veggies, and golden potatoes with salsa and veggies. They’re not only super affordable, but they’re incredibly tasty too.
