Vegan Cookie Snicker Bars

A delicious vegan cookie with a delectable peanut butter-date frosting.

Cookie Base
- 1/2 tsp vanilla extract
- 1/2 cup rolled oats
- 1/4 cup peanut butter
- 1 tbsp maple syrup
- 1/2 tsp baking powder
- 1/4 cup almond milk
- 2 tbsp applesauce
- 2 tbsp rolled oats
- 1/4 vegan chocolate chips
Frosting
- 4 pitted dates
- 1 tbsp vegan chocolate chips
- 1 tbsp peanut butter
Cookie Base
Preheat oven to 350°
Blend 1/2 cup rolled oats in a food processor
Combine wet ingredients in one bowl: vanilla extract, peanut butter, maple syrup, almond milk, and applesauce
Combine dry ingredients in a seperate bowl: oat flour, baking powder, regular oats, and chocolate chips
Slowly add dry ingredinets to wet ingredients
Line baking sheet with parchment paper
Make 8-10 small cookies
Bake in oven for about 20 minutes at 350°
Frosting
Soak dates in hot water for 10 minutes
Microwave chocolate chips for 50 seconds or until softened
Blend dates, chocolate, and peanut butter in a food processor until frosting-like consistency
Add frosting to cookies
