Vegan Cookie Snicker Bars

A delicious vegan cookie with a delectable peanut butter-date frosting.

Ingredients
  

Cookie Base

  • 1/2 tsp vanilla extract
  • 1/2 cup rolled oats
  • 1/4 cup peanut butter
  • 1 tbsp maple syrup
  • 1/2 tsp baking powder
  • 1/4 cup almond milk
  • 2 tbsp applesauce
  • 2 tbsp rolled oats
  • 1/4 vegan chocolate chips

Frosting

  • 4 pitted dates
  • 1 tbsp vegan chocolate chips
  • 1 tbsp peanut butter

Instructions
 

Cookie Base

  • Preheat oven to 350°
  • Blend 1/2 cup rolled oats in a food processor
  • Combine wet ingredients in one bowl: vanilla extract, peanut butter, maple syrup, almond milk, and applesauce
  • Combine dry ingredients in a seperate bowl: oat flour, baking powder, regular oats, and chocolate chips
  • Slowly add dry ingredinets to wet ingredients
  • Line baking sheet with parchment paper
  • Make 8-10 small cookies
  • Bake in oven for about 20 minutes at 350°

Frosting

  • Soak dates in hot water for 10 minutes
  • Microwave chocolate chips for 50 seconds or until softened
  • Blend dates, chocolate, and peanut butter in a food processor until frosting-like consistency
  • Add frosting to cookies
  • Enjoy!
