Dry Ingredients
- 1/2 cup oat flour
- 1/2 cup whole wheat pastry flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 cup unsweetened cocoa powder
Wet Ingredients
- 1/2 cup + 2 tbsp unsweetened vanilla almond milk
- 3 tbsp almond butter
- 1/2 banana
- 3 tbsp pure maple syrup
- 1/4 tsp peppermint extract
Toppings
- 2 tbsp chocolate chips (vegan)
- 2 mini crushed candy canes
Preheat oven to 350°
Add dry ingredients to a large mixing bowl: oat flour, whole wheat pastry flour, baking powder, baking soda and unsweetened cocoa powder
Whisk together wet ingredients in a separate mixing bowl: unsweetened vanilla almond milk, almond butter, banana, pure maple syrup and peppermint extract
Slowly add wet ingredients to dry ingredients
Lightly grease a muffin pan with olive oil
Pour batter to form six muffins
Add chocolate chips and crushed candy cane on top
Bake in oven for 20 minutes at 350°
Let cool and enjoy!
