Cookie Base
- 1 cup rolled oats
- 3 tbsp peanut butter
- 1/2 tsp vanilla extract
- 2 tbsp maple syrup
- 1 tbsp mini chocolate chips
- 2 tbsp coconut flour
- 1/4 cup + 2 tbsp almond milk
Frosting
- 2 tbsp almond milk
- 2 tbsp cocoa powder
- 1/2 tsp vanilla extract
- 2 tsp maple syrup
- 1 tsp peanut butter
Cookie Base
Preheat oven to 350°
Blend rolled oats in blender to form a flour-like consistency
Combine all dry ingredients in one bowl: rolled oats, coconut flour, and mini chocolate chips
Combine all wet ingredients to a separate bowl: peanut butter, vanilla extract, maple syrup, and almond milk
Slowly combine dry ingredients to wet ingredients
Spray brownie pan with olive oil spray
Add cookie mixture to pan
Bake at 350° for 10 minutes
Frosting
Add wet ingredients to one bowl: almond milk, vanilla extract, maple syrup, and peanut butter
Slowly add in cocoa powder and mix thoroughly
Add frosting to cookie base
Chill in fridge for twenty minutes
