- 1 cup whole wheat flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp pumpkin pie spice
- 3 tbsp maple syrup
- 1/2 cup almond milk
- 1 tsp vanilla extract
- 1/2 cup pumpkin puree
- 1/2 banana
- 1/4 cup vegan chocolate chips (optional)
Preheat oven to 350°
Combine dry ingredients in one bowl: whole wheat flour, baking powder, baking soda, cinnamon, and pumpkin pie spice
Mash banana in separate bowl
Combine wet ingredients: mashed banana, maple syrup, almond milk, vanilla extract, and pumpkin puree
Slowly fold wet ingredients to dry ingredients
Fold in chocolate chips
Spray muffin tin with olive oil spray
Fill muffin tins
Bake at 350° for 18 minutes
