Simple Vegan Lentil Taco Meat

How to make delicious vegan taco meat that is high in protein and iron.

Ingredients
  

Lentils

  • 1 cup dry lentils
  • 3 cups water

Vegan Taco Meat

  • 1/4 tsp cumin
  • 1/4 tsp black pepper
  • 1/4 tsp turmeric
  • 1/4 tsp garlic powder
  • 1 tbsp nutritional yeast
  • dash salt
  • 1/4 cup cilantro
  • 2 cups spinach
  • 2 tbsp lime juice
  • 1/4 tsp chili powder

Instructions
 

Lentils

  • Add lentils to pot
  • Add water to pot
  • Cook on medium heat for about 20-25 minutes

Vegan Taco Meat

  • Add all ingredients to pan: lentils, cumin, black pepper, turmeric, garlic powder, nutritional yeast, salt, cilantro, spinach, lime juice, and chili powder
  • Cook for about 10 minutes until all ingredients mix together
  • Add vegan taco meat to tacos and enjoy!
