High Protein Vegan Breakfast Sandwich on Sour Dough Toast

Ingredients
  

  • 1/4 cup tofu
  • 2 pieces sour dough toast
  • 1/4 cup spinach
  • 1 tsp nutritional yeast
  • 1 garlic clove
  • 1 mushroom
  • 1/4 tsp garlic powder
  • 1/4 tsp turmeric
  • dash salt & pepper
  • 1/4 avocado
  • 2 slices tomato

Instructions
 

  • Add tofu, spinach, nutritional yeast, garlic clove, mushroom, garlic powder, turmeric, salt and pepper to a pan
  • Cook for 10-15 minutes on low-medium heat
  • Heat two slices of sour dough toast in a toaster
  • Spread thin layer of avocado on each piece of sour dough toast
  • Add tofu mixture to both pieces of sour dough toast
  • Garnish with tomato slice
