Vegan Sweet Potato Date Brownies

Moist and gooey vegan brownies.

- 12 pitted dates
- 1/4 cup cocoa powder
- 1/4 cup peanut butter
- 1/2 cup oat flour
- 2 small sweet potatoes
- 1/2 cup applesauce
- 1 mashed banana
- 1/2 cup almond milk
- 1/2 tsp vanilla extract
- 2 tbsp maple syrup
- vegan chocolate chips
- chopped walnuts
Preheat oven to 350°
Cook the sweet potatoes for 4 minutes in the microwave or until softened
Soak the dates for 10 minutes in hot water
Blend dates, cocoa powder, peanut butter, oat flour, sweet potatoes, applesauce, and almond milk in a food processor
Fold in desired amounts of chopped walnuts and chocolate chips
Bake at 350° for 35 minutes in the oven
Microwave chocolate chips for 45 seconds
Slowly pour chocolate over brownies
Chill in freezer for 15-30 minutes (or until hardened)
Cut brownies into squares
