Vegan maple banana nut muffins.

- 4 pitted dates
- 1 cup oat flour
- 1 cup whole wheat flour
- 1/2 tsp baking powder
- 2 bananas
- 1/4 cup unsweetened applesauce
- 1/2 cup almond milk
- 2 tbsp maple syrup
- 1/4 cup chopped walnuts
Preheat oven to 350°
Soak dates in hot water for 10 minutes
Add dry ingredients together in a mixing bowl: oat flour, whole wheat flour, and baking powder
Blend dates and bananas in a NutriBullet
Add wet ingredients in a separate bowl: date and banana mixture, almond milk, applesauce, and maple syrup
Slowly fold in the chopped walnuts
Spray muffin pan with oil
Add mixture to muffin tin (makes 11 muffins)
Drizzle maple syrup and chopped walnuts on top of muffins to caramelize
Bake at 350° for 20 minutes
Let cool and enjoy!
