Vegan Tofu Breakfast Scramble

Delicious vegan tofu scramble. A lot of people are hesitant to try tofu, and I don’t blame them. Uncooked it’s a squishy square block that’s a little intimidating if I’m being honest. But, it’s really good. Don’t judge a book by it’s cover.

It may be cliche, but tofu is actually a delicious food–if you make it the right way. The trick is to add spices to make the tofu nice and flavorful. You can add oil to make it extra crispy, but it’s completely optional and it’s not an ingredient in my recipe. I like to keep my recipes raw and simple. The best part is that this recipe has less than 10 ingredients!



All ingredients are plant-based, and this recipe is free of oils. It’s a super nutritious and filling breakfast that is perfect to start your day with. It’s also high in protein, which is great for a pre-workout snack. Tofu is also a good food for vegans if you’re lacking protein in your diet.

When I initially went vegan, I didn’t know what foods to eat that were high in protein. Aside from protein powder and peanut butter, I didn’t really eat a whole lot of protein. However, I eventually discovered tofu, which is a vegan food that’s made out of soy.

I didn’t like it at first, but that’s because I didn’t cook it the right way. Initially, I would just let it simmer on the stove without adding any spices or oil to it. It had a bland flavor and wasn’t something I was interested in trying again.

However, I eventually tried making it again and added different spices to give it some flavor. It definitely grew on me overtime and is now one of my favorite foods to eat. Spices seriously make a world of a difference, so if you haven’t tried making tofu with spices, I highly recommend trying it out before ruling it out.

Ingredient’s you’ll need for this recipe:

1. Silken Tofu

The first ingredient you’ll need for this recipe is silken tofu. I typically buy the firm silken tofu at the grocery store, but you can use any tofu that you want.

Tofu is super nutritious and is a great food for vegans especially. Tofu is high in protein, and if you’re a vegan, getting enough protein is crucial.

While tofu can be a little intimidating, given it’s squishy texture, it’s actually really good if you add the correct spices.

If you don’t like tofu, I highly recommend giving this recipe a try. I didn’t like tofu initially, but once I began adding different spices and cooking it the right way, I realized that I actually loved tofu! It’s all about the spices and thoroughly cooking it until it’s a nice golden brown color.


2. Cherry Tomatoes

Next up is cherry tomatoes. You can use a regular tomato as well, but I personally like to use baby tomatoes to add to my tofu scramble. They’re easy to chop up and they taste a bit different than regular tomatoes.

I try to add as much color to my tofu scramble, and tomatoes are super nutritious and make the tofu scramble even healthier.


3. Fresh Spinach

I try to add spinach to all of my meals because it’s so healthy and good for you. I’ll even sneak it into my smoothies because the fruit masks the spinach flavor.

One thing to note is that when you cook spinach, it withers down to almost nothing. Spinach is also high in iron and is a great way to get your greens in for the day.


4. Garlic Powder

The first spice you’ll need for this recipe is garlic powder. It’s probably my all-time favorite seasoning to use. I add garlic powder to pretty much every dish I make–from pasta, to hummus, to burritos. Like I said, it’s a staple seasoning of mine that I add to literally everything.

It has a great flavor, and if you like garlic, you’ll love the taste of garlic powder.


5. Onion Powder

Next is onion powder. It’s similar to garlic powder but has its own distinct flavor. Like garlic powder, I pretty much add onion powder to every dish I make. They go hand-in-hand.


6. Turmeric

Turmeric is a yellowish-orange spice that is super nutritious. It has numerous health benefits which is why I like to add it to different meals I make. It’s also a little spicy, so a little goes a long way.


7. Black Pepper

Black pepper is a common spice that people use. I don’t like spicy foods, so I usually add just a dash of pepper to my meals.


8. Sea Salt

The last spice you’ll need for this recipe is a dash of salt. I try to keep my recipes relatively low in salt, so I usually don’t add more than a pinch. But, feel free to add a bit more salt if you like your food extra salty!

Ingredients
  

  • 1 container silken tofu
  • 1/2 cup cherry tomatoes
  • 2 cups fresh spinach
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp turmeric
  • pinch of black pepper
  • pinch of sea salt

Instructions
 

  • Preheat stove
  • Cut tofu into cubesĀ 
  • Wash & cut cherry tomatoes in halvesĀ 
  • Add tofu, cherry tomatoes, spinach, garlic powder, onion powder, black pepper, turmeric, andĀ nutritional yeast to pan and cook for 15 minutes or until golden brownĀ 
  • Enjoy!

Final Thoughts

Tofu scramble is a great meal to make for breakfast, lunch, or dinner. Sometimes when I’m in the mood for a more savory breakfast, I’ll make tofu scramble. You can eat it as is or make it into a sandwich. I like to make a hummus and tofu sandwich on occasion. It’s almost like a vegan version of an egg salad.

You can also add this tofu scramble to your pasta dishes or in burritos. It’s a great meal to have that’s high in protein and highly nutritious. It also only takes about 20 minutes to make in total, so it’s a really quick and easy meal to make when you’re short on time.
